    Chicken sausage dry curry is a quick and spicy dish that is packed with flavour in every bite. In this recipe, the sliced chicken sausages are tossed with simple ingredients like onion, garlic, bell pepper along with a mix of everyday spices. It is a quick and easy to make recipe that comes together in no time.

    Few years back I used to buy sausage a lot, because my sister loves it. After marriage I have never bought it, I thought my hubby won't like it. I was getting so many request from my viewers to share recipes using sausages.

    So few weeks back when I went shopping, I decided to get a packet of sausage and give it a go. When I made this and served hubby he really enjoyed it. It is perfect for busy days or when you want something tasty, nutritious and filling.

    About Chicken Sausage Dry Curry

    Sausage is a type of meat product that is made from ground meat like chicken, pork or beef, mixed with salt and spices and shaped into a long cylindrical form.

    Sausages can be mild or spicy and commonly used in cooking for frying, grilling or baking.

    They are such a versatile ingredient that can be used in a variety of dishes like curries, rice, sandwiches, omelet, pizza and many more. It adds a rich flavour and protein to your everyday meals.

    In this recipe, chicken sausages are tossed with butter, onion garlic, bell pepper and basic spices. Everything is cooked together until the sausages are well coated with the rich masala. 

    This easy chicken sausage dry curry can be made in less than 30 minutes and perfect for making during busy days, or special occasions. It is a beginner friendly and one pot recipe that pairs beautifully with rice, roti, chapathi or fried rice for a delicious meal.

    As the sausages cook in butter and spices, they become slightly crispy on the outside and stay soft, juicy inside. They also absorb the masala flavours well and result in a rich, spicy and delicious curry. 

    Chicken sausage dry curry works perfectly as a side dish for roti, chapati, naan, or even with rice. It can also be enjoyed as a quick snack or a light meal when served with fresh salad. 

    Ingredients

    • Chicken sausage : The main ingredient of this dish. It has a very mild taste and absorbs the spice flavours well when cooked. 
    • Oil : Oil is used to cook the ingredients and use any neutral oil of your choice. It helps the sausages turn slightly crispy and prevent them from sticking to the pan. 
    • Butter : Butter adds a rich flavour and aroma to the dish. It also balances the heat from the spices. 
    • Garlic : Garlic has a pungent aroma that forms a delicious base flavour when cooked with sausages. 
    • Onion : Onion adds a soft texture and turns slightly golden when fried in oil. And its mild sweetness balances well with spices. 
    • Capsicum / Bell pepper : Capsicum adds a beautiful crunch and fresh flavour to the dish. Use tricolor capsicum to make the dish more colorful. 
    • Salt : Salt brings out the taste and balances the overall flavour. 
    • Spices : Spices like red chilli powder, garam masala powder and pepper powder are added for its heat, color and flavour. These spices when mixed with sausages make the dish more flavourful and aromatic. 
    • Vinegar : Vinegar adds a slight tangy taste that balances the spice taste and sausage flavour.
    • Tomato ketchup : Tomato ketchup adds mild sweetness and tanginess. It coats well with sausages to give the curry a saucy look. 

    Step by Step Pictures

    Prepare Sausage

    1)You can use your favorite sausage.

    2)Cut sausage into small pieces.

    Make Masala

    3)Heat oil and butter in a kadai.

    4) Add in crushed garlic and fry for a min.

    5)Add in onions and salt. Saute till lightly golden.

    6)Add in salt and mix well.

    7)Add in sausage and fry for 4 to 5 minutes.

    8)Saute chicken sausage till golden brown.

    9)Now add in sliced capsicum and saute for couple of minutes.

    10)Saute capsicum till golden.

    11)Now add in red chilli powder and mix well.

    12)Cook chilli powder until fragrant.

    13)Now add in ketchup and mix well.

    14)cook until it comes together.

    15)Now Add in vinegar, instead of vinegar you can add in lemon juice.

    16)Add in garam masala powder and pepper powder and mix well.

    17)Sausage dry curry is ready to serve.

    18)Enjoy curry with roti or paratha.


    Expert Tips

    Fry the sausage : First lightly fry the chicken sausages before adding the spices. This helps to form a slight crispy texture and enhance the sausage flavor. 

    Cook on low heat : After adding spices, keep the heat low so the spices get absorbed into the sausage without getting burnt. ● Taste before adding salt : Sausages may already contain salt, so taste the curry first before adding salt. 

    Let it rest : The curry tastes even better if proper resting time is provided. So, the flavours deepens over time and become a rich and flavourful curry. 

    Storage : Store the leftover chicken sausage curry in an airtight container. It can be refrigerated for about 3 days. Reheat them on stove top or microwave by adding a splash of water to adjust the consistency. 

    Serving : Serve this spicy chicken sausage curry with rice, naan, roti, chapathi or bread for a simple and satisfying meal.  It can also be used as a filling for wrap and sandwiches for a delicious meal.

    Q. What other type of sausage can be used ?

    Well, any sausage works for this recipe like beef, pork or plain sausages and they balance well with spices. 

    Q. Can I make it ahead of time ? 

    Yes. The sausage curry tastes even better the next day because the flavours deepens over time and become a more aromatic curry. 

    Q. Can I make this less spicy ? 

    Absolutely. If you prefer a milder curry, simply reduce the amount of spice powder before adding.

    Saute Pan

    Ingredients
      

    • 12 no Chicken Sausages sliced into rounds

    For Tempering

    • 2 tablespoon Sunflower Oil
    • 1 tablespoon Butter
    • 10 cloves Garlic peeled & roughly crushed

    For Masala

    • 2 large Onions peeled & sliced thinly
    • 1 medium Capsicum (Bell Pepper) sliced thinly
    • 2 teaspoon Salt to taste
    • 1 tablespoon Kashmiri Red Chilli Powder
    • 1 teaspoon Garam Masala Powder
    • 1 teaspoon Black Pepper Powder
    • ¼ cup Tomato Ketchup
    • 2 teaspoon Vinegar or Lemon Juice

    Instructions
     

    • Heat oil and butter in a kadai. Add in crushed garlic and fry for a min. Add in onions and salt. Saute till lightly golden.
    • Add in sausage and fry for 4 to 5 minutes. Now add in sliced capsicum and saute for couple of minutes. Now add in red chilli powder and mix well.
    • Now add in ketchup and mix well, cook until it comes together. Now Add in vinegar, garam masala powder and pepper powder and mix well.
    • Serve with roti.

      Hi Aarthi- I follow your blog regularly. Just thought of sharing you this - sausages are not healthy. WHO has recently identified it as a carcinogen ( bcos its processed meat). I recommend you to not use it much..

      Tried today..turned out delicious. I was skeptical about tomato sauce but that added unique taste. Added potatoes instead of capsicum as my husband loves potato. Thnku so much
