I love making puddings, they are so much fun to make and eat. Specially when you are having kids around they make a perfect dish to enjoy. This is such an easy recipe to make, you just need few ingredients to make this. It has pure chocolate taste and flavour, so silky and delicious.

    Jelly Vs Pudding

Jelly is a dessert that is made with fruit juices combined with gelatin or agar agar. It has a firm, wobbly texture and is usually served chilled. It tastes so light and with the bouncy consistency makes it fun to eat, especially for kids.

Pudding, on the other hand, is made with milk, cream and thickened using flour, cornstarch or eggs. It has a rich creamy texture with spoonable consistency that just melts in your mouth. Often it is enjoyed warm or chilled.

    About Chocolate Jelly

This chocolate jelly is a simple, no-bake dessert that will surely become your absolute favorite treat. It uses simple ingredients like milk, cocoa powder, sugar and agar agar. And it is set into a smooth, jelly-like pudding that tastes so rich, silky and delicious.

This chocolate jelly is pure chocolate goodness and I made it in two ways using cocoa powder for a simple and light dessert. And with dark chocolate for a deeper and rich indulgent flavour.

What makes this dessert extra special is agar agar. This is a plant based setting agent derived from seaweed. It sets beautifully into a firm yet tender jelly-like consistency that holds the shape beautifully.

It is chilled and served in cute short glasses for parties, kids snack time or after meal dessert.

Serve it chilled and garnish with sprinkles, chocolate chips, chopped nuts or fresh fruits for extra flavour. Overall, it is an easy, rich and crowd pleasing dessert that everyone will love !

    Ingredients

    • Milk : Use full fat cream milk for a rich, creamy base and smooth textured pudding. It balances well with cocoa flavour and makes the dessert more indulgent.
    • Sugar : Sugar added for sweetness and adjust the quantity according to your preference.
    • Cocoa powder : Use good quality unsweetened cocoa powder, as it is the star ingredient that provides the rich chocolate flavour and color to the jelly.
    • Agar agar strips : Agar agar is a plant based setting ingredient, also known as China grass, that helps the jelly to set firm when chilled.
    • Dark chocolate chips : Dark chocolate chips add a rich, intense chocolate flavour to the jelly. They melt smoothly and make the jelly more indulgent and satisfying.
    • Vanilla extract : Vanilla adds a subtle, sweet aroma that enhances the chocolate flavour without overpowering.

    Step by Step Pictures

    Soaking Agar Agar

1)I am using agar agar strips so you have to soak it before melting it. Break agar agar into small pieces, take it in a sauce pan.

2)Pour in ½ cup of water.

3)Mix well and allow them to soak until you make other things.

    Make Cocoa Milk Mix

4)Add in 2 tablespoon of unsweetened cocoa powder into ¼ cup of cold milk.

5)Mix this really well until there is no lump. Set aside.

    Boiling Milk

6)Take sugar in a sauce pan. I am using granulated sugar. Brown sugar wont work in this recipe.

    7)Pour in milk.

8)Place this on heat and bring it to a full boil.

9)Once it starts to boil, add in the cocoa mixture into the hot milk. Mix well.

10)Add in dark chocolate chips. You can even add semi sweet chocolate or chocolate chunks too.

11)Simmer the pan and cook on low mixing often until the chocolate melts completely. Keep this warm.

    Making Jelly mix

12)Now place the soaked agar agar on heat and cook on low stirring often until the agar agar completely melts.

13)Pour this into the milk cocoa mixture and heat until it comes to a simmer.

14)Stir in pure vanilla extract and mix.

15)I use a whisk to give it one good mix.

    Setting Jelly

16)Pour this mixture into a lightly greased pan. Instead of this, you can pour into mini moulds too.

17)Place the pan into fridge and allow it to set overnight.

18)Now the jelly is all set. Gently run the sides with a butter knife.

    19)Unmould the jelly.

20)Cut it into squares and enjoy.

    Expert Tips

    • Soak the agar agar strips in water for at least 10 minutes. Then heat it until fully dissolved.
    • While cooking, stir continuously to keep the mixture smooth and lump free.
    • Agar agar sets quickly once cooled down, so transfer them immediately to serving mould, cups or tray.
    • Cover it with cling wrap and let it set in the refrigerator for 4 hours.
    • Too much agar can make the jelly too firm, so measure and add it accordingly.
    • You can also swap dark chocolate chips with milk or semi sweet chocolate for different flavors.

    Storage & Serving

Store the chocolate jelly and pudding in the refrigerator.  Serve them chilled. Pair it with whipped cream, chopped nuts, chocolate chips, sprinkles, or with a drizzle of chocolate sauce for a more indulgent dessert.

    FAQ

My jelly isn't setting well. Why?

This happens when you haven't handled agar agar properly. The agar agar needs to be soaked, fully dissolved in heat before adding it to the mixture. If it's not melted, then the dessert won't set.

Can I add gelatin instead of agar agar?

Yes, you can replace agar agar with gelatin. Use the quantity accordingly and bloom it in water before heating.

Can I make it as a vegan?

Absolutely ! You can make it vegan by using non dairy milk options like almond milk, soy milk or oat milk. But the texture may slightly differ.

Can I set the jelly in individual cups?

Yes you can pour this mixture into individual ramekins of mini cups and set.

You mentioned some of the ingredients in terms of cup. Could you please tell those in terms of ml and gram? Can we skip vanilla essence? And whether badam pisin can be used as a substitute for agar agar?
