    About Agar Agar Fruit Jelly

Agar agar / china grass is actually very good for you, it is natural coolant and cools your body instantly. It is a vegetarian setting agent which is substitute for gelatin.

Kids love jelly so much, so I made a healthy jelly which is great for kids. This one is made with fruit juice and agar agar which makes perfect summer snack.

I used agar agar strips in this recipe so you might need to add more than when you use agar agar powder. if using agar agar powder, this is the measurement, use 1 teaspoon (5 grams) agar agar powder for every 1 cup (250 ml) of fruit juice.

    Ingredients

Fruit Juice - you can use any combination of fruit juice in this jelly.
Agar Agar (China Grass) - you can use agar agar strips or powder. If using powder, you might need to use less quantity. Check notes for measurements.
Sweetener - you can use honey, maple syrup or sugar as sweetener. if your fruit juice it too sweet, skip sweetener.

    Step by Step Pictures

    Agar Agar Mix

1)Take agar agar strips in a bowl. Add water and mix well, let them soak for 15 minutes.

2)Take it in a sauce pan. Place on heat and cook on low heat till agar agar is completely melted.

    1st Layer Fruit Jelly

3)You need 2 flavour of fruit juice. I used guava and apple juice. You can use any 2 flavours.

    I am using guava juice.

4)I added a pinch of natural food colour to make it green.

5)Add in maple syrup or honey to taste. You can add sugar as well. If your juice is too sweet, you can skip sweetener.

6)Add in half of the agar agar mixture. Now place this on heat and bring it to a full boil.

7)Now the mixture is really hot.

8)Place this in a setting tray and place in fridge for 15 to 20 minutes.

    2nd Layer Fruit jelly

9)Now take apple juice in a sauce pan. Add in maple syrup or honey to taste.

10)Pour the remaining agar agar mixture into the fruit juice and place on heat.

11)Bring it to a full boil.

    Assembling

12)Remove the half set guava jelly from fridge.

13)pour the second jelly layer over the first one. Place this in fridge and let it set for few hours in fridge.

14)Once jelly is set, un mould, slice and serve.

    Equipment

    Sauce Pan
    setting tray

    Ingredients

    For Guava Juice layer

    • 1 cup Guava Juice
    • 2 tablespoon Maple Syrup or Honey
    • a pinch Natural Green Colour optional

    For Apple Juice layer

    • 1 cup Apple Juice
    • 2 tablespoon Maple Syrup or Honey

    For Agar Agar Liquid

    • ½ cup Water
    • 10 grams Agar Agar Strips

    Instructions

    • Take agar agar strips in a bowl, break into small pieces. Pour water over agar agar and soak it for 10 mins. Now heat it gently till it is melted.
    • Now take 1 cup of guava juice, green colour, maple syrup in a sauce pan. Now add in half of the melted agar agar and mix well. Heat till it is completely boiled.
    • Pour it into moulds till it is half way full and put in fridge to set for 10 to 15 mins till the top layer is lightly set.
    • Now take another cup of fruit juice in a sauce pan and add in maple syrup. Now add in the remaining agar agar and mix well. Heat till it is completely boiled.
    • Now take the mould from fridge. Pour the second fruit layer on top. Place in fridge and let it set for 2 hours. Once set, unmould, cut into squares and enjoy.

    Notes

    • I used agar agar strips. If you are using agar agar powder use just 1 teaspoon of agar agar powder for every 1 cup of fruit juice.
    • I used guava juice and apple juice. You can use any flavours.
    • When chilling the first layer, don't set it completely. Just 10 to 15 mins till the top layer is just set. So when you pour the second layer it will stick to the first layer.
    • You can create as many layer as you like.
