    Sukka Aloo Sabzi with Step by step pictures. Slow roasted potatoes with spices and onions cooked till dry and chukka like.

     

    Sukka Aloo

    You all know that potatoes are my favorite..This is another one recipe to add to my recipe list..These are a very dry dish that needs only less oil...But it takes some time to cook..You have to cook it on a very low flame until the potatoes turn crispy and all the masala sticks to the potatoes...Hence the name "Chukka", Chukka means Dry...They taste great with plain rasam rice.
     

    How to Make Sukka Aloo

    • Add cut up potatoes into salted water and cook for 10 mins. Drain them and set aside.
    • Heat oil in a kadai. Add in cumin seeds, Turmeric powder and mix well.
    • Add onions and green chillies and mix well.Add salt, chilli powder, coriander powder, pepper powder and dry mango powder. Mix well.
    • Add in boiled potatoes and toss well.
    • Simmer the flame and cook for 20-25 mins tossing often until the potatoes turn crispy around the sides.
    • Garnish with cilantro and serve with rice.

    Take all your ingredients

     

    Potatoes are cooked in salted water
     
     
    add cumin to oil
     
     
    add turmeric
     
     
    onions and chillies
     
     
    add some salt
     
     
    when onions are sauted. Add chilli and coriander powder
     
     
    add amchoor and pepper powder
     
     
    mix well
     
     
    add potatoes
     
     
    and toss well
     
     
    cook on a slow flame till the potatoes turn crispy
     
     
    its almost there
     
     
    all dried and crispy
     
     
    Serve

    Ingredients

    • Potatoes – 5 medium size peeled and cut into wedges
    • Onion – 1 sliced
    • Green Chilli – 1
    • Cumin Seeds / Jeerakam – 1 tsp
    • Chilli Powder – 1 tsp
    • Coriander Powder / Malli Podi – 1 tblspn
    • Turmeric Powder / Manjal Podi – 1 tsp
    • Amchoor Powder / Dry Mango Powder – 1 tsp
    • Black Pepper Powder – 1 tsp
    • Salt to taste
    • Oil- 2 tblspn
    • Coriander Leaves / Cialntro for garnishing
