I have already shared an irish scones recipe which got really good response. So i decided to share an eggless version. This one is flavoured with orange and cranberries which taste best together. This scones taste amazing with a cup of tea or coffee. So buttery and delicious.

About Orange Cranberry Scones
How many of you know that Orange and cranberries makes a perfect combination. These two go so well together and is used in many baking and dessert recipes like pound cake, cookies and butter cakes. Even when you are making cranberry sauce, make sure to grate an orange rind and add a little orange juice for flavour.
I made this orange cranberry scones and fell in love with it. The flavour of the tart cranberries goes perfectly well with the citrus orange flavour. I made this eggless and served this scone with a hot cup of coffee.

Orange Cranberry Scones Ingredients

All Purpose Flour - for making tender buttery scones, refined flour also known as plain flour, maida is used. you can use whole wheat flour but the texture and taste will change a little.
Sugar - traditionally scones are not too sweet since we usually enjoy with sweet tea or coffee so add accordingly.
Baking Powder - the lift and buttery layers in the scones is created with the baking powder used.
Salt - a pinch of salt enhance the taste of the scones.
Unsalted Butter - make sure you use cold butter which is cut into cubes in scones. Cold butter is rubbed into the flour to make it crumbly in texture.
Milk - use full fat milk to make the dough. It also makes the dough tender which results in buttery scones.
Orange Juice & Orange Zest - Even though some recipes uses only orange zest, I prefer adding little orange juice for flavour.
Cranberries - I use dried cranberries in the scones, fresh cranberries can leave out water which makes the scones soggy.

How to Make Orange Cranberry Scones (3 Easy Steps)
Making Scones Dough - Take flour, sugar, baking powder and salt in a bowl and mix well. Add in cubed cold butter into it and use a fork to mix it into the flour to create crumble like. Add orange zest and cranberries and mix well. Pour in milk and orange juice and use the fork to bring it together.
Shaping Scones - Take it in a work surface and flatten it. Cut it into wedges. Now arrange it in a baking tray and brush with the remaining milk.
Baking & Serving - Bake for 15 to 20 mins. Remove from oven and cool slightly. Serve with jam and cream.

Expert Tips
- Make sure to use cold butter for better texture.
- Once you add orange juice and milk, don't over work the dough. Else the scones may get dense.
- Once you bring the scones dough together, you can do multiple folds to create layers.
- You can skip milk in this recipe and use one beaten egg instead.
- If you are not baking the scones straight away. You can place them in fridge and bake later.

Ingredients
- 1¾ cup All Purpose Flour 210 grams
- ¼ cup Granulated Sugar 50 grams
- 2 tsp Baking Powder
- ½ tsp Salt
- 7 tbsp Unsalted Butter cold & cubed
- ⅓ cup Whole Milk 80 ml (add more if needed)
- ¼ cup Orange Juice 60 ml
- 2 tsp Orange Zest
- ½ cup Dried Cranberries
Instructions
- Preheat oven to 425 degree C / 220 degree F.
