Eggless Banana Sheet Cake with Chocolate Fudge Icing

I dont have a sheet pan, but i want to bake a sheet cake for quite a long time. I had this idea of baking a banana sheet cake with a thick chocolate fudgy icing over it. I made this few days back and it was perfect. I made this using the ingredients which i have on hand and the cake turned out super soft and spongy more than i expected.

I have been in banana cake mood for quite a long time. Rather than mood, it is because of the abundant of banana available in the house at that time. I was baking banana bread, banana muffins and then this. 

This cake is great with a cup of chai, coffee or milk. The cake itself is not so sweet, it is perfect. If you want a sweeter cake then increase the amount of sugar in it. But i think the sweetness from the frosting is enough to make it perfectly sweet.

Even though i call this as sheet cake, but the cake is little on the thicker side. Because i used a small square pan for baking this. If you have a sheet pan, then use that or a bigger pan will work good. But keep in mind, the thinner the cake batter is on the pan, the less time you have to bake this. Hope you will give this a try and let me know how it turns out for you.

Preparation Time : 10 mins
Baking Time : 15 to 20 mins
Setting Time : 1 hour
Serves: 6 to 10


Ingredients:


For Cake:
Mashed Ripe Banana – 1/2 cup
All Purpose Flour / Maida – 1 cup
Baking Soda / Cooking Soda – 1/2 tsp
Baking Powder – 1/2 tsp
Water – 3/4 cup
Sugar – 1/3 cup to 1/2 cup
Vanilla Essence – 1 tsp
Oil – 1/4 cup

For Icing;
Dark Chocolate – 1/2 cup chopped
Butter – 1/4 cup 
Icing Sugar / Confectioners Sugar – 1 cup
Cocoa Powder – 2 tblspn
Vanilla Essence – 1 tsp

Method:

Preheat oven to 180 degree C. Line a large baking pan with parchment paper and grease well. Set aside. I used a 20 cm square cake pan. 

Take flour, baking soda, baking powder in a bowl and mix well.

In another bowl take sugar, oil, vanilla, mashed banana, water and mix well.

Pour this into the dry ingredients and fold gently to combine.

Now spoon this mixture in to the prepared pan and bake for 15 to 20 mins untill a toothpick inserted comes out clean.

Now Remove it from oven and set aside.

Now make icing. Take dark chocolate and butter in a sauce pan and melt on low heat till melted. Set aside.

Take icing sugar and cocoa powder in a bowl and mix well. Pour this chocolate mix in it and mix well.

Add in vanilla and mix well. Now pour this over the cake and put it in fridge to set for an hour.

Slice and serve.

add butter to it
melt on a low heat till it is melted
take icing sugar in a bowl
add cocoa powder
whisk well
pour chocolate mix in
mix well
now it is combined
add in vanilla
mix well
pour the icing over the cake
spread evenly
top with sprinkles
pop this in fridge and let it set for an hour
slice and serve

    Hi Aarthi,

    I tried this cake yesterday. The cake was baked properly. The toothpick came out clean but it tasted like dough. Not sure what went wrong.
