My favorite ice cream in the world was chocolate flavored one till i made this caramel ice cream. OMG it was so creamy and so good..I loved it to the core..Homemade caramel ice cream had a real salty caramel flavor to this which i loved it so much.

Ingredients for Eggless Caramel Icecream Recipe
- Milk - ½ cup
- Cream - ½ cup (25% fat)
- Sugar - ¼ cup
For Caramel:
- Granulated Sugar - ¼ cup
- Cream - ½ cup ( 25% fat)
- Vanilla Essence - ½ tsp
- Salt - ½ tsp
How to Make Eggless Caramel Icecream Recipe
- Take ¼ cup sugar in a nonstick sauce pan..Heat till the sugar starts to melt. Keep cooking, it will start to get darker in colour and golden.
- Once it reaches that stage, remove from heat and add in cream and mix well. Add in salt and vanilla. Mix well. Leave this to cool down.
- Take milk, cream and remaining sugar in a sauce pan and boil it. Once it boils, turn off the heat and remove it.
- Let both the mix cool down completely. Now pour the milk mix over the caramel and give a good mix.
- Pour this into a container and freeze for 3 hours.
- Once it is frozen, scoop this into a mixer and give a good whiz. Pour it back into container and freeze another 3 to 4 hours.
- Blend this for one more time and freeze overnight.
- Scoop and serve.

Have a doubt..in the ingredients you have mentioned cream and milk 1/2 a cup but in the pic seems like cream 1 cup and milk1/2 cup..what is the right measurement??

The caramel is very hard to make for beginners like me. 🙁 Wish I new how much time it takes and the heat needed so I could get it right.

@Carmen Quintanathe caramel will take around 8 to 10 mins. It depends on the heat of your stove as well.
