Eggless Caramel Icecream Recipe / Salted Caramel Icecream Recipe – Icecream without Icecream Maker

My favourite icecream in the world was chocolate flavoured one till i made this caramel icecream. OMG it was so creamy and so good..I loved it to the core..Homemade caramel icecream had a real salty caramel flavour to this which i loved it so much.

Preparation Time : 10 mins
Cooking Time: 15 mins
Chilling Time : 12 to 15 hours
Makes : 1/2 liter

Ingredients:
Milk – 1/2 cup
Cream – 1/2 cup (25% fat)
Sugar – 1/4 cup

For Caramel:
Granulated Sugar – 1/4 cup
Cream – 1/2 cup ( 25% fat)
Vanilla Essence – 1/2 tsp
Salt – 1/2 tsp

Method:
Take 1/4 cup sugar in a nonstick sauce pan..Heat till the sugar starts to melt. Keep cooking, it will start to get darker in colour and golden. Once it reches that stage, remove from heat and add in cream and mix well. Add in salt and vanilla. Mix well
Leave this to cool down.
Take milk, cream and remaining sugar in a sauce pan and boil it. Once it boils, turn off the heat and remove it.
Let both the mix cool down completely. Now pour the milk mix over the caramel and give a good mix.
Pour this into a container and freeze for 3 hours.
Once it is frozen, scoop this into a mixer and give a good whiz. Pour it back into container and freeze another 3 to 4 hours. blend this for one more time and freeze overnight.
Scopp and serve.

Take all your ingredients

I used a non stick pan

Take sugar in the sauce pan

heat it on medium heat

it will start to clump together
then it will slowly melt

Now it is all melted

It is getting little golden

Now the colour has darkened
this is the colour which i want

add in cream

it will bubble up

add in salt

vanilla

give a good mix

look now thick it looks

now take milk in a sauce pan

add in cream

and sugar

heat it up

bring it to boil

Now it is thick and creamy

let both the mix cool down completely

Look how thick it is

pour the milk mix into this

mix well

now it is all done

pour into a bowl

time to freeze

freeze it

After it has frozen for 3 hours

remove it to a blender

puree smoothly

pour into the same bowl

freeze again

i too it after 2 hours and gave one final whiz in
the blender and freezed it again
use a icecream scoop 

look how creamy it is

Enjoy

I drizzle some caramel sauce over it

    Hi aarthi,
    Have a doubt..in the ingredients you have mentioned cream and milk 1/2 a cup but in the pic seems like cream 1 cup and milk1/2 cup..what is the right measurement??

    The caramel is very hard to make for beginners like me. 🙁 Wish I new how much time it takes and the heat needed so I could get it right.

    @Carmen Quintanathe caramel will take around 8 to 10 mins. It depends on the heat of your stove as well.
