It had been a long time since I baked a cake, so a couple of days back I finally decided it was time to get back into it. Once I started, there was no stopping, I somehow ended up baking two cakes!
One was a classic vanilla chocolate chip cake, and the other was this one you see here. Being back in the kitchen, measuring, mixing, and watching the cake rise in the oven felt so comforting and joyful, reminding me why I love baking so much.

This is a Easy and Delicious moist chocolate cake recipe which is so soft and chocolaty. It is a quick recipe for chocolate cake. All you need is egg, sugar, oil, vanilla, milk, cocoa, flour and raising agent. You don't need any special equipments to make this cake. All you need is a whisk and mixing bowl.
This recipe uses cocoa for the chocolate flavor. You don't need butter or chocolate in the recipe. Try to use best quality cocoa powder you can find which provide the best chocolate cake recipe. Even though this recipe is very easy to make, it is a wonderful recipe to bake with kids. Simple and easy techniques even beginners kids can make this recipe easily. Some recipes uses boiling water to make moist texture, this don't uses that, still the cake turns out fluffy and moist.

- Egg - I used large egg for a single layer of chocolate cake. I haven't tried this without eggs. You can check my eggless chocolate cake recipe.
- Sugar - I used granulated sugar. You can use caster sugar too.
- Vanilla Extract - use pure vanilla for best flavor.
- Oil - canola oil, refined oil, sunflower oil or vegetable oil can be used.
- Milk - use full fat milk for better texture. You can use soy or almond milk too.
- Plain Flour - I used all purpose flour, you can use whole wheat flour also.
- Baking powder - baking powder is the raising agent for this recipe.
- Cocoa - Try to use best quality cocoa powder you can find which provide the best chocolate cake recipe.

Step by Step Pictures
1)Preheat oven to 180 degree C (360 degree F). Line the base of 8 inch round cake pan with parchment paper. Grease the sides of the cake pan with some oil or butter. Set aside.

2)Take egg, sugar and vanilla in a bowl and use a hand whisk to whip this till fluffy.

3) It will take around 2 to 3 minutes.

4)Pour in oil over the eggs and mix well. Instead of oil, you can use melted butter.

6)Pour in milk. I used full fat milk, you can use almond milk, soy milk or oat milk.

7)Whisk this together to form a mixture.

8)Place a sieve over the bowl. Add in plain flour.

9)Add in cocoa powder and baking powder.

10)Sieve it together.

11)Fold gently to form a smooth batter.

12)Pour the batter in the cake pan. Spread evenly.

13)Top with chocolate chips or any nuts of choice.

14)Place the tray in to the oven and bake for 30 to 35 mins until a toothpick inserted comes out clean. Remove the cake pan from oven and allow it to cool down for 10 minutes.
Invert it over a plate, dust with icing sugar or decorate with any frosting of choice. cut into pieces and Serve.

Left over cake can be wrapped with plastic wrap and stored in fridge for 4 days. Store in freezer for upto 3 months. Reheat in microwave for few seconds before serving.

Yes you can use melted butter instead of oil. Butter add so much flavour that oil, but oil helps make the cake so moist.

This is a very forgiving recipe. Absentminded as I am (and also didn't read the recipe entirely before I began) I added the sugar to the dry ingredients (recipe asks to add it to the wet ingredients and mix), forgot to add the oil (whisked it in at the end) and I'm pretty sure I over mixed the batter - still the cake turned out damn soft and tasty! Keeping this as a go-to for hereafter.
