    Ladies finger curry is a quick and easy poriyal which is made using bhindi. Bhindi sabji is fast to make and needs just a handful of ingredients. Taste great with rasam or sambar rice or anything. This dish can be done in under 20 mins or so. You can make this and have it on its own as well, it is that delicious.

    About this Recipe

    Ladies finger or Okra is a long finger-Like green vegetable with a small tip at the tapering end that is widely used in Indian vegetables, raita, and kadhis.

    Ladys finger is a popular vegetable, particularly in India. You can find it in all local vegetable markets, as well as food malls and supermarkets. Its cost is comparable to that of other vegetables. Choose the ones that are long and dark green in colour. Avoid purchasing those with blemishes, bruises, and cuts, as well as internal stickiness that may have occurred during transportation.

    Ladies Finger Benefits

    Ladies finger is beneficial to the eyes, skin, and RBC production. It has green seed pods that are edible. Okras geographical origins are debated, with supporters claiming West African, Ethiopian, Southeast Asian, and South Asian origins. The plant is grown in tropical, subtropical, and warm temperate regions all over the world,
    and it is a popular ingredient in Southern American cuisine, Middle Eastern cuisine, Indian cuisine, Brazilian cuisine, and Sri Lankan cuisine.

    Always choose medium-diameter ladys fingers that are not too long, because bulgy ladys fingers contain large seeds that detract from the delicacy of this vegetable. Avoid shrinking okra due to moisture loss during storage. Examine for worm or insect infestations.

    Ingredients for Bhindi Sabji Recipe :

    • Ladies Finger - 15 chopped into thin rounds
    • Oil - 2 tblspn + 1 tblspn
    • Mustard Seeds / Kaduku - 1 tsp
    • Urad dal / Ulundu Paruppu - 1 tsp
    • Onion - 1 chopped finely
    • Tomato - 2 chopped finely
    • Turmeric Powder - 1 tsp
    • Chilli Powder - 1 tsp
    • Coriander powder - 2 tsp
    • Salt to taste

    Ladies Finger:
    Ladyfingers have a very mild flavour by themselves, but they can be made fancier by adding ingredients like lemon, cinnamon, cardamom, or orange peel. Because of their dryness, they are extremely absorbent, which is useful in the preparation of desserts.

    Urad dal :
    When cooked, urad has an earthy flavour and an unusual mucousy texture.

    Coriander Powder :
    Coriander Powder is a flavouring agent used in a variety of cuisines.  It is one of the oldest known herbs and spices. It is mentioned in the Bible, and seeds from the plant have been discovered in ruins dating back to 5000 B.C.  Its name is derived from the Greek word koris, which means stink bug.

    Ingredients

    • Ladies Finger - 15 chopped into thin rounds
    • Oil - 2 tblspn + 1 tblspn
    • Mustard Seeds / Kaduku - 1 tsp
    • Urad dal / Ulundu Paruppu - 1 tsp
    • Onion - 1 chopped finely
    • Tomato - 2 chopped finely

    Instructions

    • Heat 2 tblspn oil in a pan, add lady finger and saute till golden brown, drain and set aside.
    • Now in the same pan, add more oil if needed, add mustard and urad dal and let it sizzle.
    • Now add onions and cook till golden.
    • Add in tomatoes and cook till mushy.
    • Add salt and spice powders and mix well.
    • Add in the lady finger and mix well.
    • Serve.

    Take ladies finger in a bowl

     

    heat oil in a pan, add lady finger

     

    fry till golden

     

    now it is done..remove to a plate

     

    heat oil in a pan, add mustard and urad dal

     

    add onions

     

    cook till golden

     

    add tomatoes

     

    mix well

     

    add salt and spice powders

     

    mix well

     

    add ladies finger

     

    mix well

     

    Serve

     

    Version 2 : Ladies Finger Curry | Bhindi Sabji

     

    This is one curry which i make very often, but somehow i missed to share it here. Few days back i made this for dinner..Many of you have been asking me to share this recipe as soon as i shared the image on instagram. So here i am sharing you the recipe for simple ladies finger dish.

    Cooking Time : 30 mins
    Serves: 4

    Ingredients for Bhindi Sabji

    • Oil - 2 tblspn + 1 tblspn
    • Ladies Finger - 15 chopped
    • Cumin Seeds / Jeerakam - 1 tsp
    • Onion - 1 large chopped finely
    • Green Chilli - 1 slit
    • Turmeric Powder - 1 tsp
    • Ginger Garlic Paste - 1 tblspn
    • Tomato - 2 large chopped finely
    • Chilli Powder - 1 tsp
    • Garam Masala Powder - 2 tsp
    • Coriander leaves a handful finely chopped
    • Salt to taste
    • Water as needed

    How to Make Bhindi Sabji

    1. Heat oil in a kadai. Add chopped ladies finger and cook for 5 to 6 mins till has got a nice colour to it. Remove and set aside.
    2. Heat 1 tblspn of oil in the same pan.. Add in cumin and let it sizzle.
    3. Add in onions and cook till golden. In goes chillies and mix well. Season in salt and mix well
    4. Add in ginger garlic paste and cook for a min or so.
    5. In goes tomato and cook till oil separates from the mix.
    6. Add in all the spice powders and mix well.
    7. Add in water and mix well. In goes the fried okra and mix well. Simmer this for 5 to 6 mins.
    8. Add in coriander leaves and mix well.
    9. Serve with roti.

    Take all your ingredients

     

    chop ladies finger into small pieces

     

    heat little oil in a pan, add it in

     

    saute for few mins

     

    cook that down till it gets nice colour

     

    now it is done

     

    remove to a bowl and set aside

     

    in the same pan, add little more oil and crackle in some cumin

     

    add onions

     

    add in chillies and cook that till golden

     

    ginger garlic paste

     

    season with salt and turmeric powder

     

    mix that through

     

    add tomatoes

     

    mix that well

     

    cook that down

     

    add chilli and garam masala powder

     

    mix well

     

    add water

     

    bring it to a boil

     

    add fried ladies finger in

     

    mix well

     

    simmer till thickens

     

    add coriander leaves

     

    mix well

     

    Serve
