Mango Upside Down Cake

Finally I am back with a recipe post after a long time. I never expected that I will post a recipe in my blog this soon. But I am happy that I am back to form very soon. I will try updating blog regularly, but if I didn’t keep up my words please pardon me.

My life is going so good, I am enjoying each moment upto the peek. The only thing which makes me feel is “TIME”, Life is running in a very busy shedule, since I have joined my work after the wedding leave. Its really hard to find some time for myself.  I don’t know where the days are running, still can’t believe that today is the 13th day of our happily married life. Overall it is new experience..

If you are wondering that this is the first recipe which I made in my very own house. Then you are wrong because this is not the one.  Honestly  I didn’t take photos of the first meal which I made:(  I have told you the reason, because my kitchen is not set properly, I didn’t get a chance to take picture. But  I will post the grant unveling of my very own kitchen pictures. If you are eager to know what I cooked first. I am telling you, it is nothing special, just plain old sambar, my favorite potato roast, mango kotsu, Ginger Pickle and papad. Just plain simple meals. I hope that this clear many of viewers questions!!

Now talking about this cake, I am having a craze towards upside down fruit cakes. I am loving it a lot and very excited to see the real fruity pieces dispersed all over the top of the cake along with some caramelized sugar glaze. This cake gives you a complete mango flavour  since the batter has mango as well which is perfect for this season.

I hope you will love this a lot and tell me if you like it..

Ingrediants:

All Purpose Flour / Maida – 1 1/2 cup / 180 gms

Baking powder – 1 tsp

Baking Soda – 1/2 tsp

Salt – 1/4 tsp

Sugar – 3/4 cup / 150 gms + 50 gms for sprinkling

Vanilla essence – 1 tsp

Butter – 100 gms

Egg – 1

Mango – 2 large sliced

Mango Puree – 120 ml / 1/2 cup

Method:

Preheat the oven to 160 Degree C / 320 Degree F.

Sift flour, baking powder, baking soda and salt together and set aside.

Take a square baking tray and grease it with butter. Sprinkle 50 gms of sugar over it. Arrange the sliced mango pieces over the sugar and set aside.

Take butter, sugar and vanilla in a bowl and beat it till creamy. Add in egg and mix well.

Pour in the pureed mangoes and mix well.

Now add in the sifted flour mixture and mix well.

Pour this over the mango arranged tray and bake it for 40-45 mins.

Remove the tray from oven and let it cool for 10 mins.

Invert it over a plate.

Slice and serve with icecream.

Pictorial:
Take all your ingrediants
First puree some mangoes and slice some mangoes
Butter a square pan
Sprinkle it with sugar
and arrange the mango slices..
Now sift flour, baking powder, salt and baking soda
and set that aside
Take butter, sugar and vanilla in a bowl and beat well
add egg and mix well
beat untill it turns creamy
add the mango puree
and mix well
throw in the flour mixture
and mix well
Pour that in the tray
and bake it
till golden
invert it to a plate and serve

    Congratulation and best wishes for your new married life. This is the first time i leave a comment in a blog.Recently i visited your blog and i love almost all dishes. I tried ur vanilla homemade ice cream and it turned really nice. I love to try this upside down cake but i use gas oven. Please suggest me the temperature and time taken. Also which cake tin should i use in the gas oven to get the correct texture.

    @SeenaI am not sure about a gas oven. because i have never used that. try setting low temparature so that the cake wont get burned. Try to use aluminium or glass dish.
