    Christmas Fruit Cake made in Microwave. Learn how to make microwave christmas fruit cake in less than 5 minutes. Life changing recipe which can be made in less than 10 mins from start to finish.

    Christmas Fruit Cake in Microwave Recipe

    Baking is a stress reliever, i love baking when i am feeling little low on head. There is something in it. Many of you must have not tried it because you dont own a oven. For those people i have my microwave baking recipes and for those who dont have a microwave i have a pressure cooker cake recipe for you.

    This is my final cake recipe for this christmas. I have already posted my microwave chocolate cake, eggless fruit cake and pressure cooker vanilla milk cake.

    I have few more cookies recipe to post too. Tomorrow i will post a cookie recipe, so look out. Now coming back to this recipe. I always wanted to post a microwave plum cake recipe, because before i have an oven, I used to make plum cake in microwave.

    But i have never written that recipe, so i totally forgot it. Couple weeks back i tried it with my own recipe. I added some dates syrup too. You got to add some sticky stuff like molasses, honey, golden syrup, corn syrup or dates syrup. It is because you need some sticky stuff to hold the cake. And also i put the cake in fridge for a hour, so the cake holds better. 

    How to Make Christmas fruit cake in microwave

    • Take water in a microwave safe bowl and cook for a min till the water is hot.
    • Add in dried fruits and nuts and let it steep for 5 mins.
    • In the mean time, take flour, cocoa, baking soda in a bowl and mix well.
    • Now take the dried fruits soaked mix, add in sugar, oil, dates syrup and mix well.
    • Add the flour mix into this and mix well.
    • Take a microwave safe bowl, brush all side with oil. Pour the batter in, don't fill too much, just fill half way.
    • Put in microwave and cook for 21/2 mins to 3 minutes. When it is done. Leave a standing time of 5 mins.
    • Remove it from oven, if it is risen much, just pat it down a little.
    • Allow it to cool completely.
    • Now invert it, slice and serve.

    Ingredients

    • All Purpose Flour / Maida - 1 ¼ cup / 150 grams
    • Cocoa - 3 tblspn
    • Baking soda - ½ tsp
    • Sugar - ½ cup / 100 grams
    • Oil - ¼ cup / 60 ml
    • Dates syrup / Honey / Molasses - 4 tblspn
    • Dried Fruits - ½ cup Raisans, Dates, Tutti Fruity, Cherry, Sultanas
    • Nuts - 3 tblspn I used Walnuts & Almonds
    • Water - ½ cup / 125 ml

    Instructions

    • Take water in a microwave safe bowl and cook for a min till the water is hot.
    • Add in dried fruits and nuts and let it steep for 5 mins.
    • In the mean time, take flour, cocoa, baking soda in a bowl and mix well.
    • Now take the dried fruits soaked mix, add in sugar, oil, dates syrup and mix well.
    • Add the flour mix into this and mix well.
    • Take a microwave safe bowl, brush all side with oil. Pour the batter in, dont fill too much, just fill half way.
    • Put in microwave and cook for 2 ½ to 3 mins. When it is done. Leave a standing time of 5 mins.
    • Remove it from oven, if it is risen to much, just pat it down a little.
    • Allow it to cool completely.
    • Now invert it, slice and serve.

    Notes

    • Don't fill the microwave safe bow too much. Because the cake rises a lot. Just fill half way of the bowl.
    • After you take the cake out of the microwave, pat the cake down a little.
    • Allow the cake to cool completely, and invert the cake.
    • I left the cake in the fridge overnight. The cake got hard the next day, I took it out and left it to come to room temperature, The cake turned soft as usual.

    Christmas Fruit Cake in Microwave step by step pictures

    Take all your ingredients
    Take water in a microwave safe bowl
    Put it in microwave for 1 min
    Now the water is hot
    Add the nuts and dry fruits in it
    Let it steep for 5 mins
    Take flour in a bowl
    Add cocoa powder
    Baking soda goes next
    Mix that around
    Now the fruits have steeped
    Add sugar in
    Add in oil
    Molasses or Honey or Dates Syrup
    Pour it in
    I used the bowl which i used for oil,
    so the sticky stuff just slides out easily
    mix that well
    Add the flour mix in
    Mix that well
    Drizzle oil in a microwave safe bowl
    Spread it on all sides
    Pour the batter in, don't fill too much
    I got two bowls
    Put in microwave and cook for 21/2 mins
    All baked
    if it rises too much, just press a little
     
    Now invert it and serve..

        I was very excited to try this recipe today. Followed it exactly. Looked amazing exactly like yours.. waited for it to cool .. then in the fridge. Oh the disappointment .. it was rock hard! Now it's room temperature and still hard to cut a slice .. i poured milk on it to soften and popped in defrost mode.. was a little softer. I will try again .. I think 3 minutes would've been perfect.

      Hi...I tried this cake but without the dry fruits( as i dint have it
      ).. when i read the recipe i was a lil skeptical about baking in just 5 minutes, as cakes usually take 30 to 40 min to get ready. But i followed the recipe n was amazed how beautifully it came out. I just made a small change i used milk instead of water. I have a little query my cake was a lillte hard in the edges, any particular reason ? n it even turned a lil more harder when i refrigerated..so i sprinkled some water n again microwaved it was 30 sec. it became moist again

      @DIVYAI think u must have baked a little longer. Try reducing the time next time, since each microwave vary. The cake will turn hard when u put in fridge. If you remove it from fridge and allow it to come to room temp then it will become soft again. CHECK MY NOTES..

        Will it not be too pudding like if you cook it in microwave? Also got to reduce the addition of liquid materials like syrup and oils.
        Micriwave ovens if you keep using too long, it gets burnt or spoils fast right

        I've made several microwave cakes.. all were not more than 3 minutes. Needs to look slightly damp anshiny od n top. The residual heat cooks it to perfection

      @Deepika PU can keep this for three to four days in fridge, then reheat ir in microwave for 30 sec to make it soft again

      @Nilakshi KakotiI am not sure..because this recipe is specially designed for microwave..If you wanna bake in oven, i would suggest you to bake at 180 degrees

      Hi Aarthi , how r u ? I tried your plum
      Cake recipe, today. I made a few changes in the recipe becoz of my two yrs old daughter , she do not eat whole nuts & dry fruits . So, i grinned the same n cake batter also i have used cake beater for mixing everything well . Then , microwaved (L.G ) it at high temp(900) for 5 minutes. It is soft and really good in taste. But, it is not at all spongy. Pls suggest . Thanks in advance .

      Hi Aarthi.. Like always hv tried this recipe of urs.. As well.. It turned out well. It tasted Yummmy but bt the only thing that happened was that the cake was very hard in between.. Wen i cooled it at room temperature n then tried to re warm it.. It still didn't becum soft like the sides.. What could be the reason... Shall i reduce the cooking time or shall i sprinkle some water or milk and then reheat in the oven,please suggest

      Hi this recipe was easy. But it didnt come that good. The oil taste was in front when it was hot. And the baking soda taste when cooled. Moreover it should have been better if i use butter instead of oil and some more sugar .

      If I might trouble you, in the above recipe, is this ingredient line:
      Dried Fruits - ½ cup Raisans, Dates, Tutti Fruity, Cherry, Sultanas
      meant to be 1/2 cup of EACH fruit, or a TOTAL of 1/2 cup of all?
