    Meethi Seviyan Recipe / Sweet Vermicelli Recipe

    Meethi Seviyan is a sweet vermicelli dish made during ramadan season. The vermicelli is roasted till golden in ghee and cooked in sugar till it gets like a halwa. It is similar to my semiya kesari but a little modification

    Meethi Seviyan Recipe

    Seviyan is a special dish which is made on holy ramadan days. When i was looking for new recipes using seviyan, i found this to be pretty interesting. I already shared semiya payasam recipe in this blog. Will soon share seviyan kheer as well.

    Sweet made using vermicelli is perfect for diwali or any festive occasions as well. If you are looking for easy sweet recipe which can be made in less than 30 mins.

    How to Make Meethi Seviyan

    • Heat ghee in a kadai. Add in nuts and fry till golden. Remove it to a bowl.
    • Now in the same ghee. Add in vermicelli roast till golden.
    • Pour in water and cover and simmer for 10  mins till it is cooked. The seviyan should never get completely dry, there should be some water left in it, if not add few tblspn of water. So when you add sugar the seviyan doesn't get hard.
    • Now add in sugar and mix well. Cook till gets thick.
    • Add in cardamom powder, nuts, saffron and mix well.
    • Serve.

    Meethi seviyan is a north indian sweet dish made using vermicelli. This is a perfect dish served during vratham.

    Ingredients
      

    • Seviyan / Vermicelli - 1 cup break it into small pieces
    • Water - 2 cup
    • Sugar - ½ cup
    • Ghee - 2 tblspn
    • Nuts - ¼ cup I used cashews, walnuts, pista
    • Cardamom Powder - ½ tsp
    • Saffron a pinch

    Instructions

    Meethi Seviyan with Step by Step Pictures

     
    Take all your ingredients
     
    Heat little ghee in a kadai

     

    Heat it up

     

    add in nuts

     

    fry till golden

     

    remove it to a bowl

     

    In the remaining ghee

     

    add in vermicelli

     

    roast them

     

    roast till light golden

     

    now it has all turned light golden, i need a bit
     more colour than this

     

    like this

     

    Done

     

    add in water

     

    mix well

     

    cover and cook till seviyan is cooked

     

    now it is all cooked, the water shouldn't evaporate completely, if it gets too dry,
     add 2 to 3 tblspn of water, so when you add sugar the seviyan wont get hard

     

    add in sugar

     

    mix well

     

    add in saffron

    and little cardamom powder

     

    mix well
     
     
     
    add in nuts

    mix well

    Serve

      Is the pan you use is a ceramic pan ...?
      Is it a good alternate to non stick pan...becoz I m fed up with nonstick ones ,the coat goes off even when I ues it very carefully...?
      Give me a suggestion for a long lasting non stick pan ..

        it is wonderchef pan. not ceramic. For nonstick dont use metal spoon. DOnt scrub with metal scrubber use a sponge.

        Yes I m using wooden laddie, scrub with sponge...doesn't give the pan to maids to clean...but in vain..
        Suggest me a good brand.
