If you are running low on veggies, then this recipe comes handy. It calls for onions and very little tomatoes. You can skip tomatoes and make this with only onions alone. This curry has no spice powders except turmeric powder.
About Onion Curry
Onion curry also known as pyaz sabzi or vengaya curry makes a perfect side dish for roti, chapati or even rice. The recipe is very simple to make and can be put together in less than 20 minutes.
The recipe starts by sauteing onions, tomatoes, ginger, garlic in oil. Once cooked, a thick coconut paste is mixed it. Thats it onion curry is made. Adding coconut + fennel seeds paste in this curry gives a little creaminess and thickness to the curry, This curry taste well with roti or phulkas.
To make this more nutritious, you can add in vegetables like carrots, beans, green peas or potatoes. And for extra creaminess, Grind coconut with roasted gram dal or little cashews.

Step by Step Pictures
1)Heat oil in a pan. Add in lots of sliced onions, green chillies, salt, turmeric powder and ginger garlic paste. Saute all together for 4 to 5minutes.

2)Once everything is mixed well, Cover and cook until onions are wilted. Cooking the onions covered helps the onion release the natural moisture from the onions making it sweet.

3)Your onions should be cooked down till it is sweet. This is what makes the curry so delicious..

4)Add in chopped tomatoes and mix well. Cook this for another 2 to 3minutes.

5)Once onions and tomatoes are cooked. Add in coconut paste. This is ½ cup coconut ground together with a teaspoon of fennel seeds.

6)Mix in the coconut paste into the onions and cook for another 2 minutes. Thats it, onion curry is ready.

7)Enjoy with hot roti or rice.

Expert Tips
- Saute the onions till soft, this adds nice sweetness to your curry.
- If you don't have tomatoes, skip tomatoes. Instead add little lemon juice in the end.
- You can add very little roasted gram dal or cashews or any nuts along with coconut when grinding. This adds thickness to the curry.
Storage & Serving
This curry can be served with chapati, roti, paratha or phulka. You can serve with appam or idiyappam also. Leftover curry can be stored in fridge for upto 2 to 3 days.

- 3 tablespoon Groundnut Oil
- 3 large Onions peeled & sliced thinly
- 5 no Green Chillies slit
- 1 tablespoon Ginger Garlic Paste
- 1 large Tomato chopped finely
- 1 teaspoon Turmeric powder
- 1 teaspoon Salt
For Grinding
- ½ cup Fresh Coconut grated
- 1 teaspoon Fennel seeds
Instructions
- Grind coconut and fennel seeds to a smooth paste. Set aside.
- Heat oil in a kadai. Add in onions, green chillies, salt, turmeric and ginger garlic paste. Saute this for 2 to 3 minutes. Cover and cook on low mediumh heat for 5 to 10 minutes. Now the onions would have become sweet and soft. Add in tomatoes and cook till soft.
- Add in coconut masala and mix well. Cook on low for 2 minutes. Turn off heat and Serve with roti or rice.
