    Simple and Easy Vegetarian Tacos made with flavourful spiced black beans, salsa, sour cream, cheese is a perfect weekend dinner. This vegetarian refried beans tacos is so good, you will never miss meat. I am sure this will become your families new favorite.

    Vegetarian Tacos Recipe

    If you are a fan of Mexican foods, specially tacos then this will be your new favorite. I love chicken and meat, but when I tasted this dish, I didn't even miss meat. It was that good.

    You can never resist with just one, I gulped down 4 tacos in a minute. The flavour of the black beans along with all the fixings or toppings really tasted so good together. Now I am making it over and over again.

    About Vegetarian Tacos

    Tacos is one of the most popular Mexican dish that is loved by most people across the world. It is made either with soft tortilla or crispy taco shell. You fill them with spiced minced meat or refried beans as protein.

    A good taco gets it taste from all the toppings you add like salsa, onions, lettuce, cheese, tomatoes, sour cream, guacamole.

    There are more than hundreds of tacos made across Mexico like Birria tacos, Al Pastor (marinated pork with pineapple), Carne Asada (grilled steak), and Carnitas (slow-cooked pork) and more.

    But how about a vegetarian taco. If you are wondering vegetarian foods can't taste that good as meat? Then think again. Because this black beans tacos has changed all my perception about a veg taco.

    This recipe for a vegetarian tacos, refried beans tacos or black beans taco is made entirely from scratch. I made my own whole wheat mini tortillas, seasoned Mexican black beans, sour cream, salsa all from scratch.

    And if you think, it took me hours. No not at all. I prepared the tortilla, salsa, sour cream, beans a day in advance. The next day I just assembled all the stuffs and made this as a weekday dinner.

    If you are into meal prep, then you can meal prep beans and toppings on a weekend so you can easily whip up a delicious tacos on a weekday. If you can find mini corn tortilla or wheat tortilla, then the work is even easier.

    To make it easy for you, here are the toppings which you can make at home

    • Whole wheat tortilla or corn tortilla
    • Homemade Sour Cream
    • Salsa
    • Guacamole
    • Refried Beans

    What makes this taco so delicious

    The seasoned black beans made this so good. Specially once it is mashed and topped over tortilla it just sticks over it without falling apart which makes the eating mess free.

    I made my black beans the way I like it, but you can adjust it as per your taste. Kidney beans, pinto beans, black eyed peas can be used instead of black beans. Cooked black beans can be stored in fridge upto a week.

    Most taco recipe uses the crispy taco shell which naturally adds the crunchy taste. Since I used homemade soft wheat tortilla, I fried it on the skillet until the base of the tortilla gets slightly crispy. Once folded , you can the contrast in texture, the outer is crispy and the inside it soft.

    Mexican Black Beans Ingredients

    • Black Beans - I used black beans for the filling which is more authentic. but you can easily swap it with any beans of your choice. Black eyed peas, kidney beans, pinto beans are great choice.
    • Onions - use finely chopped onions which literally disintegrates into the beans mixture.
    • Tomatoes - most recipe for beans doesn't use tomatoes. but it adds the most delicious sweet taste to the beans.
    • Garlic & Chillies - be generous with garlic and chillies. Garlic helps with digestion and adds aroma.
    • Spices - You can use taco seasoning if you can find it. But cumin, paprika and oregano are the seasoning which I used for the beans and it paired really well together. You need salt as well.
    • Olive Oil - use good quality olive oil for cooking the beans.
    • Garnishing - in the end, add in coriander leaves and lemon juice. These two balance the taste of black beans.

    Step by Step Pictures

    Cooking Black Beans

    1)Wash and soak black beans in fresh water for at least 8 to 10 hours or overnight.

    2)Strain the black beans and add it to pressure cooker. Cover with fresh water, add in salt to taste.

    3)Cover the pressure cook for 6 whistle, reduce the flame and cook for 10 minutes. Turn off the heat and let the steam escape by itself. Open the cooker to check whether beans are cooked. it should mash easily. Set aside.

    Making Black Beans

    4)Heat olive oil in a pan. Add in finely chopped onions, green chillies and garlic. Saute for 2 to 3 minutes until onions and garlic is aromatic.

    5)Add in chopped tomatoes and cook until tomatoes get mushy. It will take around 3 to 5 minutes.

    5)Add in salt, paprika, cumin powder and oregano. Mix this really well into the onion tomato mixture. let the spices bloom in the oil and release its flavour.

    6)Pour in the cooked black beans along with any cooking liquid left in the pot.

    7)Mix this really well and simmer the pot and cook on low heat for 10 minutes.

    8)After 10 minutes the mixture would have thickened a bit and the black beans mix is ready.

    9)Turn off the heat and add in lemon juice and chopped coriander leaves. Mix well. This is your black beans.

    Making Mashed beans for topping

    10)At the time of making tacos, you can reheat the beans till hot and bubbly. Mash the beans really well so it thickens and is mushed up.

    11)Cook for few more minutes on medium heat. This will thicken the mixture and the beans will get mushy. This way you can top the tacos with the mashed beans easily without spilling over.

    Assembling Tacos

    12) Now lets assemble the tacos. You will need mini tortillas, you can use whole wheat, corn or flour tortilla. You need Homemade sour cream, shredded mozzarella cheese, Mexican Salsa, shredded lettuce, coriander leaves, chopped raw onions, chopped tomatoes and lemon wedges.

    13)Place the tortilla in a lightly greased skillet. The heat should be very low.

    14)Spread some mashed black beans on each tortilla. Add as much as you need.

    15)Sprinkle top with shredded mozzarella cheese.

    16)Cover the skillet with a lid and let the cheese melt.

    17)It will take just a minute. Remove this to a serving plate.

    18)Top with lettuce, salsa, sour cream, onions, tomatoes, coriander leaves.

    19)Gently fold like this and enjoy.

    Ingredients
      

    For Pressure Cooking Black Beans

    • 1 cup Dry Black Beans
    • 5 cups Water
    • 1 teaspoon Salt

    For Black Beans Mixture

    • 2 tablespoon Olive Oil
    • 2 tablespoon Garlic peeled and chopped finely
    • 1 large Onions peeled and chopped finely
    • 2 no Green chillies chopped finely
    • 2 medium Tomatoes chopped finely
    • 2 teaspoon Paprika
    • 2 teaspoon Cumin powder
    • 2 teaspoon Dried Oregano
    • 2 teaspoon Salt to taste
    • ¼ cup Coriander Leaves or Cilantro chopped finely
    • ½ no Lemon juiced

    For Assembling Tacos

    • 3 teaspoon Olive Oil
    • 12 no Whole Wheat Tortilla mini
    • 1½ cup Mozzarella Cheese
    • 3 cups Lettuce shredded
    • 2 cups Mexican Salsa
    • 1 large Onion peeled and chopped finely
    • 1 large Tomato chopped finely
    • 1 cup Sour Cream
    • ½ cup Coriander leaves chopped finely
    • 1 no Lemon Wedges

    Instructions
     

    • Soaking black beans - Wash and soak black beans in plenty of water for at least 8 to 10 hours or leave them overnight.
    • Pressure cooking black beans - Strain the black beans and add it to pressure cooker. Cover with fresh water, add in salt to taste. Cover the pressure cook for 6 to 8 whistle, reduce the flame and cook for 10 minutes. Turn off the heat and let the steam escape by itself. Open the cooker to check whether beans are cooked. it should mash easily. Set aside.
    • Saute Aromatics Black Beans Filling - Heat olive oil in a pan. Add in finely chopped onions, green chillies and garlic. Saute for 2 to 3 minutes until onions and garlic is aromatic. Add in chopped tomatoes and cook until tomatoes get mushy. Add in salt, paprika, cumin powder and oregano. Mix this really well into the onion tomato mixture.
    • Cooking Black Beans - Pour in the cooked black beans along with any cooking liquid left in the pot. Mix this really well and simmer the pot and cook on low heat for 10 minutes. Turn off the heat and add in lemon juice and chopped coriander leaves. Mix well. This is your black beans.
    • Mashing Black Beans for Tacos - At the time of making tacos, you can reheat the beans till hot and bubbly. Mash the beans really well so it thickens and is mushed up. This way you can top the tacos with the mashed beans easily without spilling over.
    • Assembling Tacos - Place the tortilla in a lightly greased skillet. The heat should be very low. Spread some mashed black beans on each tortilla. Add as much as you need. Sprinkle top with shredded mozzarella cheese cover and cook on low heat for 1 minute till cheese is melted. Remove this to a serving plate, Top with lettuce, salsa, sour cream, onions, tomatoes, coriander leaves. Gently fold like a taco and enjoy.
