    Shahi Pulao Recipe with step by step pictures. This is made with Basmati Rice and seasoning with Whole garam masala.

    Shahi Pulao

    This is my second recipe for shahi pulav. This is one of my all time favorite recipe. I first posted it a year back, since it is my fav, i want it to have a clear pictorial recipe. So here i am with a new post with more pictures. You can check out my old recipe here.

    This rice dish has a slight sweetish tingle to it. It is a kind of rich recipe. You can make it in different variation, you can add saffron water in it, you can add veggies to it. I will soon post that. So off you go to the recipe.

    Ingredients for Shahi Pulao

    • Basmati Rice -  1 cup
    • Onions - 1 large sliced thinlyGreen Chilli - 3 large slit
    • Ginger Garlic Paste - 2 tblspn
    • Salt to taste
    • Sugar - 1 tblspn
    • Coriander Leaves - a handful
    • Mint Leaves - a handful
      Water - 1.5 cup

    For Seasoning:

    • Ghee - 2 tblspn
    • Cumin Seeds / Jeerakam - 1 tblspn
    • Bay Leaf - 1
    • Cinnamon Stick - 1 inch piece
    • Cardamom / Yelakai - 4 crushed
    • Cloves / Krambu - 4

    How to make Shahi Pulao

    1. Wash and soak the rice for 30 mins.
    2. Heat ghee in a pressure cooker. Add in all the seasoning ingredients and saute for a while.
    3. Now add in salt and sugar and mix well. Let them cook for a while.
    4. Add in onions, green chilli and saute till they turn golden.
    5. Now add in ginger garlic paste and saute them for a min.
    6. Now add in the soaked drained rice and mix them well.
    7. Add in a good amount of coriander and mint leaves.
    8. Pour in 1.5 cups of water and bring it to a boil. Simmer the flame and pressure cook for 1 whistle. Let it simmer for 5 mins. Switch off the flame and let the steam go all by itself. Fluff the rice with a fork.
    9. Serve with any curry.

    Ingredients

    • 1 cup Basmati Rice
    • 1 large sliced thinly Onions
    • 3 large slit Green Chilli
    • 2 tblspn Ginger Garlic Paste
    • Salt to taste
    • Sugar
    • a handful Coriander Leaves
    • a handful Mint Leaves
    • 1 tblspn Water
    • For Seasoning:
    • 2 tblspn Ghee

    • -1 Bay Leaf
    • 1 inch piece Cinnamon Stick -
    • 4 crushed Cardamom / Yelakai
    • 4 Cloves / Krambu

    Take all your ingredients
    Soak your rice
    Heat ghee in a pan
    Add cumin seeds and all whole spices
    Add in salt and sugar
    Mix them well
    Add in onions and chillies
    Saute them on high heat
    Till it is golden brown
    Add in ginger garlic paste
    Saute them
    Add in soaked rice
    Add in coriander and mint leaves
    Saute them for a while
    Pour in water
    Mix well
    Bring it to a boil
    Cover and Cook
    Till rice is done
    Serve
