Bhatura is my favourite, i make them atleast once in a week or two week. Traditionally bhatura is made with yeast, but trust me i have have never used yeast in my bhaturas. I always add baking soda or powder in my bhatura. I have already shared a bhatura recipe in my website and this is my bhatura recipe using wheat flour..

Resting Time : 30 mins
Cooking Time : 45 sec to 1 min per bhatura
Ingredients:
Whole Wheat Flour / Atta - 2 cup + more as needed
Milk - ¾ cup
Curd / Yogurt - ¼ cup
Salt to taste
Sugar - 2 tblspn
Baking Powder - 1 tsp
Oil - 1 tblspn + 1 tsp + for deep frying
Method:
In a bowl, take milk, curd, salt, sugar, baking powder and 1 tblspn oil. Mix well so sugar is melted.
Add in flour and knead it for 5 mins
Add a tsp of oil over it and knead for 1 min more.
Cover it wth a bowl and let it rest for 30 mins.
Divide it into equal balls. Roll one into little thick roti.
Deep fry it on hot oil, press the top with a slotted spoon it will puff up. Flip over and cook on other side as well till golden.
Drain and serve with aloo curry.

Add in wheat flour |
mix well |
knead it to a dough |
drizzle some oil over it |
knead again |
cover and let the dough rest for 30 mins |
now the dough is done |
divide it into equal portions |
take a portion |
roll it in to smooth ball |
Roll it into bhatura |
Drop it in hot oil |
press on top with a slotten spoon |
now it has puffed up |
flip over and cook till golden |
Drain it and serve |
