Veg Noodles Fried Rice Recipe

This is one recipe which i tasted few weeks back when we dined out. I loved it to the core, the combination of rice and noodles along with the other sauces and stuffs was very tasty. We actually ordered a chicken version of this, but when i came home i decided to try a veg version and share it with you all..

This is pretty easy to make, if you have any leftover rice, you can cook some noodles and toss everything up. This taste superb with lots of pepper on them. You can even add some green chilli sauce to make it spicy. But i like to serve with some chilli vinegar.

Preparation Time : 10 mins
Cooking Time : 25 to 30 mins
Serves : 2 to 3

Ingredients:

Basmati Rice – 1/2 cup 
Noodles – 100 grams
Oil – 2 tblspn
Ginger Garlic Paste – 2 tblspn
Onion – 1 medium size chopped finely
Green Chillies – 3 finely chopped
Carrot –  1 medium size finely chopped
Baby Corn – 6 chopped
Capsicum / Bell Peppers – 1 chopped ( i used, red, yellow and green)
Green Beans – 6 chopped
Salt to taste
Sugar – 1 tsp
Pepper Powder – 2 tsp
Soy Sauce – 2 tsp or to taste
Vinegar – 1 tsp or to taste
Spring Onion a handful finely chopped

Method:

Cook rice and noodles separately in salted boiling water till done. Drain and set aside.

Heat oil in a kadai. Add in ginger garlic paste and saute for a min.

Add in onions, chillies and toss well. Add in salt, sugar and 1 tsp pepper and toss well.

Add in carrot, beans, capsicum, baby corn and toss well. Cover and cook for 5 to 7 mins till the veggies are done.

Now Add in soy sauce, vinegar and toss well. 

Add in rice and noodles and toss well.

Sprinkle in another tsp of pepper and spring onions. Toss well.

Serve hot.

Take all your ingredients
I cooked some rice and noodles separately in salted boiling water till done, drained them and set aside to cool down
Heat oil in a kadai, add in ginger garlic paste
add in onions and green chillies
saute till lightly golden
add in all the veggies, i added carrots, beans, baby corn and red yellow green capsicum..
toss well
cover and cook
now the veggies are done
add in salt, sugar and pepper powder
toss well
add in little vinegar
soy sauce
and mix well
add in noodles and rice
toss well
sprinkle little more pepper powder
mix well
add in coriander leaves or spring onions
serve

    Looks yummy..Which noodles have you used in this recipe? Is it Hakka noodles..
