    Vegetable Au Gratin Recipe

    Vegetable au gratin is one of the simple and flavourful dishes that is made with basic ingredients but still feels something special. A mix of soft and crunchy vegetables are cooked in a creamy white sauce, then topped with cheese and baked until golden and bubbly on top. It is perfect for making as a lunch, dinner or as a side dish to serve with bread.

    Vegetable Au Gratin is one recipe which I wanted to make for quite sometime. Finally I made it yesterday and shared a picture on Instagram and everyone asked for the recipe. So here I am with the recipe.

    About Veg Au Gratin

    Vegetable au gratin is a classic French baked dish that is so simple and comforting and full of flavour and nutrition. I enjoy making baked dishes like lasagna, pizza, bread, but this one is definitely a family favourite because it's so creamy, cheese and comes together as a whole meal. 

    Simple gratin vegetables or vegetable au gratin is made with a variety of mixed vegetables tossed with bechamel sauce and cheese and baked till golden and bubbly.

    What I liked about the recipe is that it is easy to customize with your favourite vegetables like peas, zucchini, cauliflower, corn or potatoes. The creamy white sauce that combines beautifully with the vegetables and makes the dish rich and creamy.

    The recipe is so convenient that you can prepare and assemble everything together, cover and refrigerate. When you're ready to eat, just bake it straight from the fridge until bubbly and golden. Serve this vegetable au gratin with salad, bread for a complete meal. 

    Ingredients

    Mixed vegetables - I have used carrots, broccoli and beans for this dish. You can use any mix of vegetables for differ flavour and texture. 

    Butter - Butter adds a rich, creamy texture to the sauce. For alternatives, use olive oil or vegan butter. 

    All purpose flour- Flour is used to thicken the sauce. When cooked with butter, it turns into a slurry form that gives the sauce its creamy consistency. For a healthy alternative, use whole wheat flour or any gluten free flour if preferred. 

    Milk - Milk is the liquid that blends the butter and flour to create a rich, luxurious cream sauce. For vegan options, use almond milk, soy milk or oat milk. 

    Seasoning - Salt, pepper and oregano are the essential seasonings used to flavour the sauce and vegetables. You can also add garlic powder, paprika, Italian seasoning to make the sauce more flavourful and aromatic. 

    Cheese - Use any cheese variety like cheddar, mozzarella or even a mix of cheeses for extra flavour. 

    Step by Step Pictures

    1) Preheat oven to grill mode. Set temp to 200 degree c (400 degree F). Grease a baking dish with butter and set aside. Prepare all your vegetables.

    2)take water in a pan. Add in salt.

    3)Add veggies in the pan, cover and cook for 3 to 4 mins.

    4)Now strain this using a colander and set aside.

    5)Heat butter in the same pan, add in flour and saute for a minute.

    6)The raw smell from the flour should be cooked off.

    7)Now Add milk slowly and whisk till it gets smooth.

    8)Now mix this till it thickens.

    9)Add in salt, pepper, oregano and mix.

    10)add ¼ cup of cheese and mix well.

    11)White sauce is ready.

    12)Add veggies in this and mix well.

    12)Mix so the sauce coats the vegetables.

    13)Spoon this into the baking pan.

    14)top with cheese and pop this in oven.

    15)Grill this for 10 to 15 mins till the top is golden.

    16)Enjoy.

    Expert Tips

    • Don't over cook the vegetables. Just cook them until soft but still firm. So, they won't turn mushy when baked. 
    • Cut the vegetables in the same sizes for even cooking.
    • To retain the color and shape of the vegetables, steam them for 10 minutes and saute them in butter. 
    • While adding milk to the flour, whisk constantly to avoid forming any lumps. 
    • Use good quality cheese like cheddar, mozzarella, parmesan for a nice golden top and gooey cheesy texture. 
    • Sprinkle breadcrumbs on top for extra crust and crunch.

    Storage & Serving

    Store the leftover vegetable au gratin in an airtight container and refrigerate for 3 to 5 days. Reheat using a microwave before serving.  Serve this creamy and delicious vegetable au gratin with garlic bread, toasted bread, vegetable or chicken salad for a healthy meal.

    Ingredients
      

    To Cook Vegetables

    • 1 cup Broccoli cut into florets
    • 1 medium Carrot cubed
    • 5 no Green Beans chopped
    • 1 cup Cauliflower cut into florets
    • Water as needed
    • 1 teaspoon Salt

    For White Sauce

    • 2 tablespoon Butter
    • 2 tablespoon All Purpose Flour
    • 2 cups Milk
    • 1 teaspoon Salt
    • ½ teaspoon Black Pepper Powder
    • 1 teaspoon Dried Oregano
    • ¼ cup Mozzarella Cheese

    For Topping

    • ½ cup Mozzarella Cheese

    Instructions

    • Add veggies in this and mix well. Spoon this into the baking pan, top with cheese and pop this in oven. Grill this for 10 to 15 mins till the top is golden.
    • Remove and serve with toasted bread.

    1)What is au gratin?

    Au gratin is a French baked dish where the vegetables or meat is cooked with a creamy white sauce and baked with cheese on top. 

    2)Can I add other vegetables?

    Yes, you can. Vegetables like carrot, bean, broccoli, cauliflower,peas, corn, potato can be added. Avoid any watery vegetable because it may release moisture when baked and au gratin becomes runny. 

    3)Can I make this without an oven?

    You can cook it using a pressure cooker or air fryer. Cover and cook until the cheese melts. 

    4)Is this a kid friendly recipe?

    Absolutely ! The creamy sauce, vegetables and cheese makes a perfect meal for kids. 

    5)Can I use frozen vegetables?

    Yes, but first thaw and drain them well. Otherwise it will turn the sauce watery.
