Brinjal Curry(Keralan Style)

Brinjal Curry
Today is my last post for blogging marathon group 2 regional special..This is a one pot curry cooked with brinjal and aloo.This is so simple and really delicious to eat with rice.I am giving a roundup for this week’s post under Keralan special.If you missed any of the post just check it out.


Ingrediants:

Brinjal-3 chopped finely
Potato-1 chopped finely
Tomato-3 chopped finely
Green chilli-2 chopped
Curry leaves-1 spring
Mustard seeds(kaduku)-1 tsp
Cumin seeds(jeera)-1 tsp
Red chilli powder-1 tsp
Coriander powder(malli podi)-2 tsp
Turmeric powder(manjal podi)-1 tsp
Coconut oil-1 tblpsn
Coriander leaves for Garnishing

Method:

In a pressure cooker add brinjal,potato,tomato,green chilli,curry leaves,red chilli powder,coriander powder,turmeric powder and salt.Pour a dash of water in it and pressure cook for 3 whistles.

Remove the pressure cooker and mash it well.

Now in a kadai add oil and splatter some mustard and cumin seeds.Add curry leaves and mix well.

Pour the mashed veggies in this and cook on a slow flame till oil separates.

Garnish with coriander leaves,Serve hot with steamed rice.

  1. I don't make brinjal that often as no one likes it at home. I don't mind it all. Curry looks good and a different to what we normally cook.

  2. Sounds interesting. But I am allergic to Brinjal and my husband likes just one variety of brinjal curry and so I don't experiment too much with this vegetable :!!

  4. Pressure cooking brinjal is new to me. Thats one quick and easy dish. Will have to try your version soon. Enjoyed all your Keraln dishes this week in the marathon.
