Chicken Quesadilla Recipe - Chicken & Cheese Quesadilla Recipe


Quesadilla is my favourite, it is nothing but any filling placed inside some tortilla along with cheese and toasted or grilled to perfection. So delicious and cheese. I have shared few versions of quesadilla and this one is the simple one you could ever make.

I used chicken in this one, but you could easily use paneer or tofu instead of chicken. But never skip cheese, cheese is what holds the filling in the tortilla. I grilled it in a grill pan which gave a nice grill mark on top, you could toast them on a tawa.

Preparation Time : 10 mins
Cooking Time : 15 to 20 mins
Makes : 2 quesadilla

Ingredients:

Tortilla - 2 (Click here for recipe)
Olive Oil - 1 tblspn + more for toasting quesadilla
Garlic - 2 cloves chopped finely
Onion - 1 medium size sliced thinly
Capsicum / Bell Pepper - 1/2 sliced thinly

Chicken - 1 boneless breast cut into small pieces
Italian Seasoning - 1 tsp
Tomato Ketchup - 3 tblspn
Salt to taste
Red Chilli Flakes - 1 tsp + more
Mozzarella Cheese as needed

Method:

Heat oil in a pan, add in garlic and saute for a min.

Add in onions, bell peppers and saute for couple of mins.


Now add in chicken and stir fry till it is done.

Now add in ketchup, salt and chilli flakes. Mix that well till is well cooked. Filling done.

Now take a tortilla, spoon chicken filling on one side of the tortilla, top with onion, capsicum, italian seasoning, chilli flakes and cheese. Fold it over and brush oil on both sides of the tortilla.

Now put this on heated grill pan and cook till it gets crispy and gets grill mark on both sides.

Remove to a cutting board and cut into wedges.

Serve.

give a quick toss


cook it till it is well cooked


add in ketchup


season with salt and red chilli flakes


mix that well and cook till it is well mixed up...filling done


Now take some tortilla, i used chapati


spoon the chicken filling on one side


sprinkle some onions


some capsicum


if you have you can sprinkle some italian seasoning


now top with grated cheese


sprinkle some more chilli flakes


fold it


press well


oil both sides well


place it in a preheated grill pan


flip over and cook


remove to a cutting board


cut it like this


Serve


So yum
