    Brinjal with Sesame Seeds Masala Recipe with step by step pictures. This is Vankaya nuvula masala made with Brinjal ,Tamarind pulp and Sesame Seeds.

     

    Brinjal with Sesame Seeds Masala

    Andhra is famous for it brinjal curries..I have become a fan of their curries ever since i made this brinjal poppy seed curry. I made this dish, it is more like a masala than curry. I had this with steamed rice and papad, it was delicious. You can check out my other andhra recipes too.

    This curry has simple flavours but all of them are united by the creaminess of the sesame seeds, love it..So try this and let me know how it turns out for you.

     
     

    Ingredients for Vankaya nuvula masala

    • Brinjal / Eggplant - 1 big one
    • Salt to taste
    • Sugar / Jaggery - 1 tsp
    • Coriander Powder - 1 tbsp
    • Turmeric Powder / Manjal podi - 1 tsp
    • Cumin Powder / Jeera Podi - 1 tsp
    • Tamarind Pulp - 1 tbsp
    • Oil - 3 tbsp
    For Roasting & Grinding:
    • Dry Red Chillies - 4
    • Sesame Seeds - 2 tbsp
    • Garlic - 1 fat clove

    How to make Vankaya nuvula masala

    1. Take the roasting ingredients in a heavy bottom dry pan and roast till it is golden.
    2. Once it is toasted, take them in a blender and add some water to make it into a smooth paste.
    3. Now Slice brinjal into long slices. 
    4. Heat oil in a kadai. Add in brinjal slices and toss well in the oil. Now add in salt, sugar, and other spice powder and give a quick toss.
    5. Cover the kadai with a lid and let it steam cook for 10 mins till the brinjal is done.
    6. Add in the sesame masala now and some water. Mix well. Cook for 5 more mins.
    7. Now add in tamarind pulp and mix well. Cook for 5 more mins till it is thick.

    Ingredients

    • 1 Eggplant

    Vankaya nuvula masala Recipe step by step picture

     
    Take all your ingredients, you need some
    tamarind pulp too
    take a brinjal
    slice them lengthwise
    Now heat a kadai
    Add in the roasting ingredients
    roast till it gets golden
    take them in a blender
    powder  them
    add some water
    Make it into a smooth paste
    Heat oil in a kadai
    Add in the brinjal slices
    toss well
    Add in salt, sugar and other spice powders
    Mix well
    cover and cook
    Now the brinjal is half cooked
    give a quick toss
    Add in sesame paste and some water
    Add in tamarind pulp
    Mix well and cook for few more mins..

      Did you use both white and black sesame seeds? Also, can I use the indian brinjals instead of the eggplant?

      @RathiYes i have only the mixture of seeds, so used them. And yes you can use indian brinjals too
