Preparation Time : 10 mins
Cooking Time : 25 to 30 mins
Serves: 2 to 4
Brown Basmati Rice - 1 cup
Water - 2.5 cups
Oil - 1 tblspn
Onion - 1 large chopped finely
Green Chillies - 3 chopped
Ginger Garlic Paste - 1 tblspn
Carrot - 1 large size chopped
Peas - 1 cup (i used frozen)
Salt to taste
Chilli Powder - 2 tsp
Coriander Powder / Malli Podi - 1 tblspn
Turmeric Powder / Manjal Podi - 1 tsp
Garam Masala Powder - 2 tsp
Mint Leaves a handful finely chopped
Coriander leaves a handful finely chopped
Shahi Jeera / Black Cumin Seeds - 1 tsp
Fennel Seeds / Saunf / Sombu - 1 tsp
Cinnamon / Pattai - 3 cm piece
Cardamom / Yelakai - 4
Cloves / Krambu - 4
Bay Leaf - 1
Mace - 1
Wash and soak rice for 30 mins. Drain and set aside
Now heat oil in a large pot. Add in whole spices and let them sizzle.
Add in onions and salt. Saute for 2 to 3 mins.
Add in ginger garlic paste and saute for a min.
Now add in all spice powders. Mix well.
Add in veggies and toss well. cook for few mins..
Add in water, and drained rice. Add in coriander and mint leaves. Mix well. Bring it to a boil, simmer and cover the pan with a lid. Cook for 15 mins on very low heat.
Open the pan, and fluff it with a fork. Cover again and set aside for 5 mins.
|Measure 1 cup of brown basmati rice|
|Take it in a bowl|
|Wash it well and soak for 30 mins|
|Take your other ingredients|
|Heat oil in a sauce pan, add in all the whole spices|
|let them sizzle|
|add in onions|
|cook till golden|
|add in ginger garlic paste|
|cook for another min|
|add in spice powders|
|add in carrot and peas|
|add in salt|
|Add in water|
|add in drained rice|
|Add in mint and coriander leaves|
|Bring it to a boil|
|Cover and simmer for 15 mins|
|Now it is done|
|fluff with a fork|
|Cover again and set aide for 10 mins|
