Cheesy Pizza Bites Recipe

I love pizzas, i make them often a year back. But now i have slowed myself in making them more often. But i wanted to try this recipe for so many days and i made this last week. I stuffed it with cheese, olives and pizza sauce and sprinkled it with oregano  to make it even more flavourful. You can either use store bought pizza sauce, but i used homemade one. These turned so soft and cheesy. Try it and let me know how it turned out.

Preparation Time : 30 mins
Cooking Time : 15 mins for sauce
Baking Time : 25 – 30 mins
Makes – 15

Ingredients:

For Dough:
All Purpose Flour / Maida – 3 cups + extra for rolling
Yeast – 1 tblspn
Sugar – 1 tblspn
Salt to taste
Warm Water as needed
Olive Oil – 1 tblspn + 1 tblspn for greasing bowl.

For Sauce:
Olive Oil – 1 tblspn
Garlic – 5 cloves sliced
Tomatoes – 5 large chopped finely
Tomato Ketchup – 1 tblspn
Oregano – 1 tsp
Salt to taste
Sugar – 1 tsp
Pepper to taste

For Pizza Bites:
Mozzarella Cheese – 200 grams cubed
Olives – 10 sliced
Oregano – 1 tsp
Olive Oil – as needed to drizzle

Method:

Start  by making dough. Take warm water in a jug and sprinkle some yeast and sugar in it. Let it sit for 5 mins till it gets foamy.

Take flour and salt in a mixing bowl and mix well.Pour this yeasty water over that and mix well. Drizzle with some olive oil and knead it well.

Now in a clean big bowl drizzle some oil. Place the dough over the bowl and cover it with damp cloth. Let it rest for 1 hour till it doubles in volume.

While the dough is resting, make the sauce. Heat oil in a kadai.Add in garlic and saute for a min. Add in tomatoes, salt, sugar, pepper, oregano, tomato ketchup and saute for 10 mins till it gets thick and jammy.Transfer this to a bowl and let it cool down.

Preheat the oven to 200 degree C/ 400 Degree F.

Now assemble the bites. Roll out the dough using some extra flour. Cut it into small squares. Spoon some sauce over the top of each squares. Add couple of cheese cubes, olives and fold them from all sides, so it forms a ball.

Place the ball on a well greased tray. Do this for the remaining squares. Once everything is done, drizzle with some oil and sprinkle some oregano over the top.

Now bake this for 20 to 25 mins till it is golden.

Remove and Serve warm.

@Vinita SharmaYou cannot bake this in normal microwave oven, if you have convection mode in that you can make it. just preheat it for 10 mins
