My kids like every other kids loves pizza. They prefer my homemade pizza than any store bought ones. For me, Pizza should have crispy base, soft chewy crust and cheesy top. I have made pizza so many times before and shared many versions on the blog but never got the perfect crispy crust. But my life is changed now, Ever since I started making pizza in my cast iron pan, there is no turning back. I have tried similar cast iron method using oven for my veggie pizza.

About Chicken Pizza
Pizza is one of the most popular and loved food all over the world. Crispy, soft crust, with tomato basil pizza sauce, topped with favorite toppings and sprinkled with generous amount of mozzarella cheese which is baked till cheesy and bubbly. This cheese loaded pizza will be most loved dish from kids to adults.
Perfect pizza should have a crispy base and fluffy chewy interior. Traditionally pizza is made in wood fired oven which is a domed shape clay oven (brick oven) which gets over 500 degree c easily. Baking pizza in this type of oven will result in crispy crust and cheesy top in minutes. Replicating it at home can be difficult because in our household we own an electric oven which can get to 250 degree C. But I have a solution for that, It is very easy, convenient, budget friendly and affordable.

How to Get Crispy Crust Pizza
I have tried so many pizza recipes, with different techniques and tricks. I never got good result with the crust. All the pizza tasted great but I missed the crispy crust so much. Thats when I came across a recipe for pizza using cast iron pan.
Pizza made in a cast iron pan always turns to be perfect. Pizza starts cooking over stove top in a cast iron pan till the base gets crispy, I finish cooking the pizza under the broil. Broiling pizza for the last 2 minutes on the highest temperature makes the cheese gets molten, bubbly, golden.
Now you have a perfect pizza with crispy crust and cheesy top. This method for making cast iron pizza can be made using any pizza dough. You can use whole wheat pizza dough, regular basic pizza dough or No Yeast Pizza dough. If you have no time on hand, you can check my No cook pizza base.

How to Make Chicken Pizza (Stepwise Pictures)
Make Chicken Filling
1)Heat olive oil in a kadai. Add in sliced onions, tomatoes and chopped bell peppers in the oil. You can add some chopped garlic or even ginger garlic paste.

2)Saute onions and tomatoes for 2 to 3 minutes. After raw smell has gone, add in chopped chicken. I used chicken breast which I chopped into small pieces.

3)Add in salt, chilli powder or paprika and garlic powder into the chicken. Instead of garlic powder you can add garlic paste.

4)Saute this spices with the chicken for 2 to 3 minutes till the chicken is tossed in the masala and onion tomato mixture.

5)Cover and cook the chicken for 3 to 4 minutes on low heat. If you use boneless chicken thigh it might take little longer to cook.

6)Now the chicken is cooked completely. if there is any moisture, increase the heat to high and evaporate the moisture before adding the spices.
Add in dried oregano, dried basil, red chilli flakes. I added some garam masala powder for Indian touch. You can skip that if you want.

7)Add in some tomato ketchup or pizza sauce. This totally to your taste.

8)Mix well till the chicken is coated with the spicy masala. This mixture has to be thick and masala like.

9)Finally I added some chopped coriander leaves. For a variation, you can add chopped basil leaves as well.

10)This is your chicken filling for pizza. As mentioned in the blog post, I made the filling Indian style. Set aside till needed.

Make Pizza Dough
11)For this chicken pizza, you can use any pizza dough. You can use whole wheat pizza dough, regular basic pizza dough or No Yeast Pizza dough. If you have no time on hand, you can check my No cook pizza base.
In this recipe, I used my whole wheat pizza dough. Once the dough is risen, I took a portion of it and spread on a silicon mat using rolling pin or your hands.

Cooking Pizza in Cast Iron Pan
12)For cooking this pizza, I am using cast iron pan. This is cast iron dosa pan or pizza pan which I have. You can use cast iron skillet. Place the cast iron pan on stove top, don't heat yet, drizzle olive oil on the cast iron pan.

13)Now place the rolled out pizza base on the greased cast iron pan. Now turn on the heat and cook on lowest heat possible. Meanwhile assemble the pizza. Spread some pizza sauce on top of the pizza.

14)Spread the chicken filling over the pizza, sprinkle a generous amount of mozzarella cheese on top of the chicken filling. Be generous with the cheese. You have to cook the pizza on low heat for 5 minutes till the base gets little crispy.

Toppings for Pizza
15)Now for pizza toppings you can use whatever you like. For this type of pizza I like to use slices of onions, tomatoes and chopped bell peppers. If you enjoy olives, you can sprinkle some olives on top.

Broiling Pizza in oven
16)Once the base of the pizza gets little crispy on the base, pop it into the preheated oven. The oven is preheated at 250 degree C. Place the cast iron pan under the Broil and cook for 1 to 2 minutes till the cheese gets bubbly and golden brown.
If you don't have oven. You can continue cooking the pizza in the cast iron pan, but I will suggest you to cover and cook the pizza with a lid and cook on very low heat. The pizza will be cooked in 8 to 10 minutes. By this time, the pizza base will be crispy and top will be cheesy and bubbly.

17)Once the pizza comes out of the oven, immediately remove to a cooling rack or cutting board, slice into wedges and serve hot.

Expert Tips
- You can use tofu, paneer, mushroom or mixed vegetables like carrot, beans, cauliflower instead of chicken for vegetarian version.
- Sliced olives adds a wonderful toppings.
- Extra sprinkling of red chilli flakes and oregano seasoning can be done.
How to Make Pizza without Oven
If you don't have oven. You can continue cooking the pizza in the cast iron pan, but I will suggest you to cover and cook the pizza with a lid and cook on very low heat. The pizza will be cooked in 8 to 10 minutes. By this time, the pizza base will be crispy and top will be cheesy and bubbly.

Hi...im a follower of ur recipes..really all are well explained...i hav a doubt ...im also using mozezarella cheese...but mine was not melting like urs...it remain the same..sometimes it gets hardened...why so?

it may depends on each cheese. try using a different brand and dont over bake it.
