Preparation Time : 10 mins
Cooking Time : 15 mins
Makes : 2 cups of spice powder
Dry Red Chillies - 35 to 40
Coriander Seeds / Mullu Kothamalli - 1 cup
Chana Dal / Kadala Paruppu - 2 tblspn
Toor Dal / Tuvaram Paruppu - 2 tblspn
Cumin Seeds / Jeerakam - 2 tsp
Whole Black Pepper - 1 tblspn
Asafoetida / Hing / Kaya Podi - 1 tsp
Turmeric Powder / Manjal Podi - 1 tblspn
Take all the ingredients except turmeric and asafoetida in a pan and dry roast them on low heat till golden.
Now add in turmeric and asafoetida. Mix well. Cool this completely.
Take this in a blender and powder them finely.
Take them in a air tight container and use in your dishes.

|add in coriander seeds|
|add in chana dal|
|and some toor dal|
|in goes cumin seeds|
|and whole black pepper|
|now time to roast them|
|roast them on a very low heat|
|they will turn golden|
|now add in turmeric powder and asafoetida|
|mix that well|
|take the whole spices in a blender|
|powder them finely|
|remove it to a bowl and let the spices cool down|
|store in a air tight container and use in your dishes|
