    Chettinad Poondu Kuzhambu

    This kuzhambu is what i recently made and i got a serious addiction to it. It turned out so yummy, i love it to the core. The smell of shallots, garlic and fresh ground masala just lifts you.

    This is a chettinad recipe, which involves in roasting few spices and grinding them. My mom makes another version which is so simple, will share that too soon.

    Ingredients for Chettinad poondu kuzhambu

    • Oil - 3 tblspn
    • Mustard Seeds / Kaduku - 1 tsp
    • Asafoetida / Kaya Podi / Hing - a pinch
    • Curry Leaves a handful
    • Shallots /Sambar Onion - 10 peeled
    • Garlic - 20 cloves peeled
    • Tomato - 1 large chopped finely
    • Tamarind - gooseberry size
    • Coriander Seeds / Malli - 2 tblspn
    • Dry Red Chillies - 5 to 7
    • Chana Dal / Kadalai Paruppu - 1 tblspn
    • Cumin Seeds / Jeerakam - 1 tsp
    • Black Pepper - 1 tsp
    • Fenugreek Seeds / Vendayam / Methi - ½ tsp
    • Oil - 1 tsp

    How to Make Chettinad Poondu Kuzhambu

    1. Soak tamarind in some water for 15 mins. Squeeze and strain the pulp.
    2. Heat a tsp of oil in a kadai. Add in all the roasting ingredients and saute till golden. Remove it in a blender and grind it till smooth. 
    3. Heat 3 tblspn oil in a kadai. Add in mustard seeds, asafoetida, curry leaves and saute for a min.
    4. In goes shallots, garlic and saute for a min.
    5. Add in tomatoes and cook till it gets mushy.
    6. Pour in the ground masala and salt. Cook till raw smell leaves away.
    7. Pour in tamarind juice and some water if needed.
    8. Bring this to a boil, cover and simmer till oil separates.
    9. Now add in some sugar and mix well.
    10. Serve over rice.

    Ingredients
      

    • Oil - 3 tblspn

    • For Roasting & Grinding:
    • Coriander Seeds / Malli - 2 tblspn

    • Cumin Seeds / Jeerakam - 1 tsp
    • Black Pepper - 1 tsp

      This looks delicious! I do have one question- when you transfer the roasted items to the blender and puree, do you puree the stem of the chile along with the rest? Or do you chop that part off? That may be a silly question, lol. 🙂

      Hi i tried ur poondu kuzhambu recipe today it was so gud..but i felt it was lil watery so i added thr ground paste of coconut grated along wid a tsp of aachi kuzhambu masala to adjust d taste..it was much better then..thanks so much fr d recipe..annnddd ur brinjal kuzhambu recipe is awwwwsum..it was yummy..i tried it..my husband & my sis-in-law too loved it...thnx a lot fr dat recipe 🙂

      Hi,

      I tried the poondu kolambu and did some blunder:( Maybe I added twice as much sugar, it turned too sweet. Anyway to save it? I can taste all the flavours but the sweet is over powering. Please help.
