Rendang Chicken
This is another famous dish in malaysia. A simple chicken dish that is truly amazing..This one is so creamy and yummy one..You could substitute mutton or beef instead of chicken.
Ingredients for Chicken Rendang
- Chicken- ½ kg
- Potato-2 chopped
- Coconut milk-3 cup
- Kaffir lime zest-1 tblspn
- Bay leaf-1
- Sugar-to taste
- Red chillies-10(soaked in hot water)
- Shallots / Sambar onion-10
- Garlic-6
- Ginger-1 inch piece
- Turmeric powder-1 tsp
- Coriander seeds / Malli-2 tblspn
- Cumin / Cumin-1 tsp
- Pepper-1 tsp
How to Make Chicken Rendang
- In a mixer take all the ingredients given for spice paste and make it into a fine paste.
- Heat oil in a wok and add in the spice paste, salt, sugar and cook till oil separates from it.
- Add in chicken piece along with potatoes and mix well.
- Add in kaffir lime peel, bay leaf and mix well.
- When the chicken is half cooked, pour in the coconut milk and simmer it till the chicken is cooked.
- Serve hot with rice or any bread.
