Cream of Mushroom Soup Recipe / Mushroom Soup Recipe /

We have recently decided to have soups daily, Since it is very healthy for our body and helps in reducing weight. This is a good news for you, you can see lots more soup recipe in this blog soon..So far i made sweet corn soup, veg milk soup, spinach soup and few more soups. This is the soup which i made yesterday and hubby totally loved it and gulped the whole jug, so i decided it is time to share it immediately..

This soup is light, fresh and low in fat. I used a tiny amount of butter for making this, you can totally use oil. And instead of maida you can use wheat flour too. The original recipe calls for cream but i skipped that and used milk. It tasted amazing..I will soon share the spinach soup too. For more soup recipes from this blog, check this link.. 

Preparation time : 10 mins
Cooking Time : 15 to 20 mins
Serves : 4 to 5


Ingredients:

Onion – 1 medium size chopped very finely
Garlic – 2 cloves chopped very finely
Mushrooms – 200 grams sliced 
Butter – 1 tsp
Bay Leaf – 1
All Purpose Flour / Maida – 2 tblspn
Water – 3 cups
Milk – 1 cup
Salt to taste
Pepper to taste
Coriander leaves – 2 tblspn finely chopped

Method:

Heat butter in a soup pan or sauce pan. Add in bayleaf and saute for a min.

Add in finely chopped onions and garlic, saute it for couple of mins till it turn translucent.

Add in sliced mushroom and toss well in the butter. As you saute water will leach out, cook on a high heat. the water will evaporate and mushrooms will start getting brown. 

Now add in maida and mix well. Saute it for a good 3 mins till the floury taste disappear.

Now add in water and mix well, add in salt and pepper to taste.

Bring it boil, once it starts to boil, let it simmer for 3 mins. Take the bayleaf out.

Add in milk and mix once.

Switch off the heat and add coriander leaves. 

serve hot.

Take all your ingredients

Slice your mushrooms

Melt some butter

Add in bay leaf

add in onions, garlic

saute well

once it is all sauted

add in sliced mushrooms

toss well

When you saute, mushroom will leach
out lots of it moisture

at one time, the water will evaporate and
mushroom will get a little colour

at that time, add flour

now fry this well

saute till the floury taste disappear

pour in water

mix well

season with salt and pepper

bring it to boil and simmer for a min

remove the bay leaf

simmer the stove and add milk

mix once and turn the stove off

finish with lots of coriander leaves

mix well 

Serve hot..

    Oh yumm. Am happy to see that the flour i added directly into the pan and not made separately on the side.That is such a hazzle.I will follow ur way next time.

    If I use fresh cream, will the measurement for water and milk change, if so how much would recommend? I would prefer a thicker consistency than one in the picture..

    @Ushasree Sanyalif u are using fresh cream. u can use skip the milk and add cream. 1 cup. And for thicker consistency add 3 to 4 tblspn of maida.
