    Broccoli soup also known as cream of broccoli soup is made with garlic, onions, broccoli, milk, cream and basic seasoning. The soup is creamy on its own and taste great when served with bread sticks. Learn how to make delicious cream of broccoli soup with stepwise pictures and video.

    Kids love broccoli so much, most of the time I make roasted broccoli and this broccoli cheese. This soup recipe is my latest obsession. It is a creamy soup made with garlic, onions and broccoli.

    The soup has a chunky texture with milk, cream and flour added to create a creamy base. You can check a healthy super creamy broccoli soup recipe which I shared earlier on this blog.

    About Cream of Broccoli Soup

    Broccoli soup is one of the most simple soup recipe which you can make. This is also known as cream of broccoli soup. This broccoli soup is made with butter, garlic, onions, carrots, broccoli, cream and milk. The soup has little amount of flour used to create a creamy base.

    The soup can be customized as per your preference. You can use cornstarch, wheat flour instead of plain flour. Cream can be skipped in this recipe. And if you prefer you can puree the whole soup to get super creamy texture.

    I like to serve this chunky broccoli soup with some kind of bread rolls.

    Cream of Broccoli Soup Ingredients

    Broccoli - as usual for making soups and any dishes, use the freshest vegetable you can find. It makes all the difference.

    Onions & Garlic - I used red onion, you can use white onion as well. Garlic adds a earthy aroma to the soup.

    Carrots - even though this is optional, i like to use carrots for added sweetness and nutrition.

    Plain flour - Instead of plain flour, you can use wheat flour or cornstarch.

    Seasonings - I used just salt and white pepper powder for the soup.

    Stock - you can use vegetable stock or chicken stock for making the base of the soup.

    Milk & Cream - use full fat milk for rich and creamy texture to the soup. You can skip cream in this recipe for low calorie version. And olive oil can be used instead of butter.

    Fat of choice - I used butter, but you can use olive oil or any neutral oil.

    How to Make Broccoli Soup (Stepwise Pictures)

    1)Heat butter in a dutch oven or a deep pot. Add in finely chopped garlic and saute on low heat for 1 minute until the garlic gets aromatic.

    2)Add in finely chopped onions and carrots. I like to chop them pretty fine, so it disintegrates into the soup.

    3)Saute onions and carrots in the butter for 2 to 3 minutes on low heat until it softens slightly.

    4)Add in 2 tbsp of plain flour. This is to create thickness in the soup.

    5)Stir fry the flour with the onions, carrots for couple of minutes to remove the raw floury taste.

    6)Add in finely shredded broccoli into the mixture.

    7)Season the broccoli with salt and white pepper powder. Stir fry this for 2 minutes so the broccoli softens a bit.

    8)Add in 3 cups of vegetable stock or chicken stock and mix well. The flour and the broccoli mixture will combine with the soup.

    8)Now add in 1 cup of milk.

    9)Mix this whole thing together. You can adjust the salt and seasoning in thsi soup at this point.

    10)Cover the pot with a lid, cook on low heat for 10 minutes until the broccoli is cooked.

    11)Now open the lid. Add in cream which is optional.

    12)Mix well, taste for seasoning and adjust. Serve hot with bread rolls.

    Expert Tips

    • Instead of plain flour, you can use wheat flour or cornstarch.
    • Instead of broccoli, you can use cauliflower or mushrooms.
    • Cooked shredded chicken can be added in the soup for protein.
    • You can skip cream in this recipe for low calorie version. And olive oil can be used instead of butter.
    • For creamy soup, you can blend the entire soup using an immersion blender.

    Equipment

    • Cooking pot

    Ingredients

    • 2 tbsp Butter
    • 4 cloves Garlic peeled & chopped finely
    • 1 medium Onion peeled & chopped finely
    • 1 medium Carrot peeled & chopped finely
    • 2 tbsp Plain Flour (Maida)
    • 2 medium Broccoli shredded finely
    • 1 tsp Salt or to taste
    • 1 tsp White pepper powder or to taste
    • 3 cups Vegetable stock
    • 1 cup Milk
    • ¼ cup Cream

    Instructions

    • Heat butter in a heavy bottom pan. Add in garlic and saute for a minute on low heat till garlic gets aromatic. Add in onions, carrots and saute for couple minutes till the vegetables soften.
    • Add in plain flour and stir fry for few minutes till raw smell leaves. Now add in shredded broccoli, salt and white pepper and mix well for couple of minutes.
    • Pour in vegetable stock and milk. Mix well so the vegetables is combined with the stock. Cover the pot with lid and cook for 8 to 10 minutes on low heat.
    • Now stir in cream and mix well. Serve soup hot with bread sticks.
