    Thai Dumpling Soup Recipe

    Delicious and comforting flavour packed Thai dumpling soup made vegetarian at home. This vegan Thai red curry soup is so good you will be making it more often than you you think. This Thai Dumpling soup is made with red curry paste, coconut milk, soy milk, vinegar, tofu, vegetables and dumplings. Learn how to make delicious dumpling soup with stepwise pictures and video. 

    Thai Dumpling Soup Recipe

    One of the most delicious soup you can ever make is this Thai dumpling soup. It hardly takes 15 minutes to put together in total. I have already made this multiple times in a week, it is so addictive and comforting.

    This is one of the soup which you can make in bulk or as a single serving soup, any which way it is too good to resist.

    About Thai Dumpling Soup

    Thai dumpling soup is my latest obsession. It is also known as Thai red curry soup or red curry soup which is made using red curry paste, coconut milk, vegetables, tofu and dumplings. I used store bought dumplings also known as momos for this recipe. But you can make homemade too.

    I used vegetarian red curry paste for this recipe, you can use homemade or use store bought. I like to cook red curry paste with coconut milk until oil separates from the mixture which gives intense flavour to the soup base. Chicken stock can be used instead of vegetable stock. Check this cream of broccoli soup too.

    Any vegetables and protein can be added in the soup. You can use bok choy, bamboo shoots, baby corn, spinach or broccoli. Protein like tofu, prawns, chicken can be used in the soup.

    Dumpling Soup Ingredients

    Red Curry Paste - You can use red curry paste that is available in tub in the refrigerate section for fresh taste. Any of your favourite brand of curry paste can be used. You can even make your own red curry paste, recipe below 

    Coconut Milk - use thick fresh coconut milk to cook along with red curry paste. It adds flavour and makes the curry so taste.

    Vegetables & Protein - I used cabbage, carrot, mushrooms in this recipe. You can use bok choy, bamboo shoots, baby corn, spinach or broccoli. Proteins like tofu, prawns, chicken can be used in the soup.

    Seasonings - I used soy sauce, vinegar, jaggery as seasoning for the soup. 

    Stock - I used vegetable stock as soup base, you can use water or chicken stock. 

    Dumplings - I used store bought dumplings also known as momos for this recipe. But you can make homemade too.

    Homemade Red Curry Paste Recipe

    • Onion - ½  sliced
    • Shallots(sambar onion) - ½ cup
    • Dry red chillies - 10 
    • Ginger-1 inch piece
    • Garlic-10 cloves
    • Coriander seeds(malli)-1 tblspn
    • Cumin seeds(jeera)-1 tsp
    • Coriander stems- ½ cup
    • Kaffir lime skin(Narthankai)-3 peels
    • Salt -1 tsp
    • Oil-3 tblspn
    • Water as required

    Take all the ingredients in a blender and make it into a coarse puree. 

    How to Make Thai Dumpling Soup (Stepwise Pictures)

    1)Heat oil in a pot, add in red curry paste and stir fry for 2 to 3 minutes. 

    2)Now pour in coconut milk and mix well with the red curry paste till it is combined.

    3)Cook on medium heat until oil separates from the mixture.

    4)Add in brown sugar.

    5)Add in vinegar. All these ingredients are to taste.

    6)Add in soy sauce.

    7)Mix this really well.

    8)Pour in vegetable stock and mix well. Bring this to a full boil.

    9)Now add in carrots, cabbage, mushrooms, tofu and mix well.

    10)Cover and simmer for 5 minutes.

    11)While the vegetables are cooking, pan fry momos. Heat 1 teaspoon oil in a frying pan. Place the frozen momos or dumplings in the pan. Pour in the water and cover the pan with a lid.

    12)Cook on low medium heat for 3 to 4 minutes until the bottom is crispy and dumplings is cooked. 

    13)Now add in glass noodles into the broth.

    14)Immerse the noodles into the broth. It will get cooked in a matter of minutes.

    15)Place the momos over the broth.

    16)Sprinkle with coriander leaves. Serve hot.

    Expert Tips

    • You can use chicken stock instead of vegetable stock.
    • Any variety of momos can be used in the dish. You can steam the momos separately and add it into the soup. 
    • Any vegetables like bamboo shoots, bok choy, baby corn, can be used in this soup.
    • You can use green curry paste instead of red curry paste.
    • Taste and adjust the soup as per your taste.

    Ingredients
      

    • 1 tablespoon Oil | Toasted sesame oil
    • 3 tablespoon Thai red curry paste
    • 1 cup Coconut milk
    • 1 teaspoon Brown sugar or jaggery
    • 1 teaspoon Soy sauce
    • 2 teaspoon Vinegar
    • 2 cups Vegetable stock
    • 1 medium Carrot julienned
    • ¼ cup Cabbage shredded
    • 100 grams Tofu Cubed
    • 5 no Mushrooms halved
    • 50 grams Glass noodles or Rice noodles
    • 3 tablespoon Coriander leaves

    For Dumplings

    • 1 teaspoon Oil
    • 4 no Vegetable momos or dumplings
    • 4 tablespoon Water

    Instructions

    • While the vegetables are cooking, pan fry momos. Heat 1 teaspoon oil in a frying pan. Place the frozen momos or dumplings in the pan. Pour in the water and cover the pan with a lid. Cook on low medium heat for 3 to 4 minutes until the bottom is crispy and dumplings is cooked.
    • Now add in glass noodles into the broth. Immerse the noodles into the broth. Place the momos over the broth. Sprinkle with coriander leaves. Serve hot.
