Dahi kadhi recipe, Rajasthani kadhi made with yogurt, gram flour, onions, green chillies, ginger and spices. This simple kadhi is tempered with simple spices which taste so good with rice.

Rajasthani Kadhi
Dahi kadhi is one of the simplest recipe you could make, it need just a handful of ingredients and taste yummy with plain cooked rice. I have made kadhi pakora before and it is a super hit at home.
About Rajasthani Dahi Kadhi
Kadhi is a simple curry made with yogurt, besan and spices boiled with a simple tempering. It is very popular in the Northern part of India. There are many versions of kadhi made like Gujarati kadhi, Sindhi kadhi. Each region have their own version of kadhi.
One popular kadhi is Punjabi Kadhi Pakora in which fried fritters is added to yogurt kadhi. This version is Rajasthani version of dahi kadhi which is simple and clean tasting.
You start by making the yogurt besan mix. You have to use sour curd which taste good, in kadhi. I like to whisk them well but for easy mixing, you can use a blender to puree it.
The tempering used is simple and basic like ginger, onions, mustard, chillies. Boil everything together and It is so good with rice or roti.

Ingredients
- Yogurt (Curd)- for every kadhi you have to use sour curd or yogurt. It makes the kadhi so tasty.
- Besan - besan is mixed with dahi to create creamy sauce. It also helps the curd prevent splitting.
- Oil or ghee - I used oil for tempering, but for more taste use ghee.
- Tempering - Mustard, green chillies, ginger and onions are sauted in oil till golden brown.
- Seasonings - Salt, sugar, red chilli powder is used for seasoning.

Step by Step Pictures
Yogurt mixture
1)Take yogurt in a bowl. For every kadhi you have to use sour curd or yogurt. It makes the kadhi so tasty and gives the kadhi slight sour taste.

2)Add in gram flour (besan), besan is mixed with dahi to create creamy sauce. It also helps the curd prevent splitting.

3)Add in turmeric powder for the golden colour.

4)Whisk till smooth. there shouldn't be any lumps. Instead of whisking you can add all these in a blender and puree smooth.

Tempering
5)Prepare ingredients for tempering. You need sliced onions, green chillies, ginger.

6)Heat oil in a deep pot. Add in mustard seeds and allow them to pop.

7)Add in ginger, onions and green chillies.

8)Saute till golden brown. The onions should turn golden.

Making Dahi kadhi
9)Reduce the flame to low, pour in the dahi mixture into the tempering.

10)Immediately mix it well.

11)Pour some water into the yogurt besan mixture.

12)Whisk it well till there is no lumps.

13)Bring this to a full boil.

14)Boil this for 6 to 10 minutes.

15)Reduce the flame, add in salt.

16)Add in red chilli powder.

17)Add in coriander leaves.

18)Add sugar to taste.

19)Mix well. Your kadhi is ready to serve.

20)Enjoy with rice.

For Yogurt Mix
- 1½ cup Plain Yogurt (Curd) slightly sour
- 2½ tablespoon Gram Flour (Besan)
- 1 teaspoon Turmeric Powder
- 2 cups Water
For Tempering
- 2 tablespoon Oil or Ghee
- 1 teaspoon Mustard Seeds
- 1 tablespoon Ginger peeled & finely chopped
- 1 medium Onion peeled & finely chopped
- 3 no Green Chillies slit
For Kadhi
- 1 teaspoon Salt to taste
- 1 teaspoon Red Chilli Powder
- ¼ cup Coriander Leaves finely chopped
- 1 teaspoon Sugar or to taste
Instructions
- Take yogurt, gram flour, turmeric powder in a bowl and whisk well till smooth. You can even add it in a blender and blend till smooth.
- Heat oil or ghee in a deep pot, add mustard and let it sizzle. Add in ginger, onions, green chillies and saute till onions get golden brown.
- Pour in the besan yogurt mixture and whisk well. Add in required amount of water if needed. Keep whisking and bring it to a boil. Once it boils, cook on a high heat for 4 to 5 mins. Now add in salt and mix well.
- Take it off the heat and add in chilli powder and coriander leaves and little sugar. Mix well. Serve with rice.

This recipe is very interesting...I usually boil the yogurt and besun flour first and then temper it...This is quick and simple...Also another point I must make, I learned to make this from my Mother-in-law. She usually cooked the besun and yogurt for a very long time, simmering for an hour or so....
