Drumstick Brinjal Tomato Poriyal / Drumstick Poriyal / Brinjal Tomato Poriyal

This is such a simple dish, just a normal poriyal. But the vegetables combination in this is so perfect. All these four veggies pair beautiful with each other and compliment the taste. This taste best with sambar rice , rasam rice or even curd rice..So try this out and let me know what you think..

Preparation Time : 10 mins
Cooking Time : 15 to 20 mins
Serves : 3 to 4


Ingredients:

Onion – 1 large chopped
Tomato – 1 large chopped
Drumstick / Murungaikai – 1 large cut and slit lengthwise
Brinjal – 1 large chopped
Chilli Powder – 1 tsp
Turmeric Powder / Manjal Podi – 1 tsp
Salt to taste
Mustard Seeds / Kaduku – 1 tsp
Oil – 2 tblspn


Method:

Heat oil in a kadai. Add in mustard seeds and allow them to pop.

Add in onions, tomatoes, drumstick and brinjal. Mix them well in the oil. Add in some salt and turmeric powder. Toss well. Cover and Cook for 10 mins on a very low flame till the vegetables are done.

Now open the pan and add in chilli powder. Toss them well.

Serve this curry with rice.

Saute for a while
Cover and Cook
Cook till the veggies are done
Add a touch of chilli powder
Saute them for a min
Done..
