Few weeks back we went to our favourite veg restaurant, usually i dont order soup there. But this time i thought of trying their tomato soup..I ordered and enjoyed it..This made me realize that i haven’t posted tomato soup recipe in my blog.

So the next day itself, i made my soup, clicked it and enjoyed it to the core. Some people add cream in their tomato soup. But i dont usually add. Soups are meant to be healthy, so i dont want to make it unhealthy with the addition of cream. But i like to add a touch of butter in my soup. Because it gives nice flavour to the soup.

Preparation Time : 5 mins
Cooking Time : 15 to 20 mins
Serves : 4
Ingredients:
Butter – 1 tsp
Bay Leaf – 1
Garlic – 4 cloves
Onion – 1 medium size chopped
Tomatoes – 4 medium size chopped
Beetroot – 1/4 of a medium one, peeled and cubed
Salt to taste
Pepper to taste
Sugar – 1 tsp or to taste
Cornflour / Cornstarch – 1 tsp
Milk – 1/4 cup
Tomato Ketchup – 2 tsp (Optional)
Water – 3 to 4 cups
For Croutons:
Bread Slices – 2
Oil – 1 tblspn
Method:
Heat butter in a cooker, add in bay leaf and garlic, saute for a min.
Add in onions and saute for another min.
Add in beetroot and tomatoes. Saute for 2 mins.
Add in salt, sugar and mix well. Add in water. Cover and pressure cook for 2 whistle. Simmer the cooker for 5 mins. Turn off the heat and let the steam escape all by itself.
Now open the cooker, remove the bay leaf.
Use a handblender to puree the soup. If you dont have hand blender, cool the mix then puree the soup in a blender.
Pour the pureed soup through a sieve and sieve well.
Mix cornflour with milk and set aside.
Now pour the soup in a sauce pan, add pepper, tomato ketchup and cornflour milk. Boil once.
Remove and serve hot with some croutons.
For Croutons.
Cut bread slices into small squares.
Heat oil in a tawa and place the cut bread slices in oil and fry till golden on both sides. Remove to a plate and set aside

remove it to a plate and set aside |
Melt some butter in a pressure cooker |
Add in bay leaf |
few chopped garlic pieces |
add in onion |
saute for a min |
Add in tomatoes and beetroots |
saute for a min |
Add in salt |
and some sugar |
saute for 2 mins |
Pour in water |
mix well |
Pressure cook |
now everything is cooked |
now take the bay leaf out of the cooker |
i used a hand blender to puree the soup |
If you dont have a handblender, use normal blender to puree, but cool the soup lightly before blending |
now strain this whole thing in a sauce pan |
Use a ladle to help it strain |
keep pushing |
I kept on pushing till the last bit of the soup is extracted |
This is the silky smooth soup |
This is optional, add some ketchup, ketchup gives a little kick to the soup |
add some black pepper |
Take cornflour in a bowl |
Add 1/4 cup of milk and mix well |
Pour this into the soup |
Bring it to a boil |
Mix well and boil it once.. |
Now take a bowl |
ladle your soup in |
place some crispy bread croutons |
sprinkle some pepper powder |

What is the milk in every post? Cow milk or coconut milk?

How come soups have to be healthy?
Took a long time to scroll past all the not all informative pics!
A 40+ pictorial for a simple non sinfull tomato soup. I get tired before I reach the stowe!
I will lend you my recipe for a truly sinful one:
2 stalks of celery
1 bell pepper preferable yellow
1-2 chili peppers or 1 tsp dried ditto – to your taste
2 yellow onieon
3 – 4 garlic cloves
1/2 dl dry white wine
2 cans of Mutti crushed tomatoes
1 large Lovagestalk, finely chopped
Oregano
Basil
Salt and pepper
Vegestable broth (preferable Herbamare)
Oil, butter, salr
Chop all the vegestables.
Roast the peppers and chilies hard, and, lower the temperature then. add garlic, cellery and onions.
Simmer for 10 min. Then add white wine and tomatoes.
After 5 min add the herbs and let simmer for another 20 min.
And now the sinfull part:
200 g of philadelphia cream cheese,
3 garlic cloves, crushed
A pinch of salt
Basil
Serve in bowls with a LARGE spoonful of creamcheese.
And enjoy
