Egg Curry Recipe / Egg Kuzhambu Recipe

This is a tasty egg curry which i made few days back and it turned out to be a super hit. It was spicy, tasty and very flavourful. I loved each mouthful when mixed with hot rice..DELICIOUS..

Preparation Time : 10 mins
Cooking Time : 35 to 40 mins
Serves : 4
 
Ingredients:

For Masala:
Oil – 1 tsp
Fennel Seeds / Saunf / Sombu – 1 tsp
Whole Pepper – 1 tsp
Cumin Seeds / Jeerakam – 1 tsp
Ginger – 1 tblspn chopped
Garlic – 1 tblspn chopped
Onion – 1 large sliced thinly
Coconut – 1/2 cup grated
Chilli Powder – 1 tsp
 
For Gravy:
Eggs – 4 hard boiled and peeled
Oil – 2 tblspn
Bay Leaf – 1
Cinnamon / Patta – 2 cm piece
Tomato – 2 large chopped finely
Green Chillies – 2 slit
Chilli Powder – 1 tsp
Garam Masala Powder – 1 tsp
Turmeric Powder / Manjal Podi – 1/2 tsp
Salt to taste
Water as needed
Coriander leaves a handful finely chopped
Method:
Heat 1 tsp oil in a kadai. Add in fennel, cumin and pepper. Fry for a min.
Add in ginger and garlic. Fry for a min.
Add in onions and saute this till golden.
Add in coconut and fry till light golden. Now take it in blender, add some chilli powder and make it into a smooth paste.
Heat 2 tblspn oil in a kadai. Add in bay leaf and cinnamon. Fry for a min.
Add in tomatoes and green chillies. Saute till the tomatoes turn mushy,
Now add in the spice powders and mix well. Add in the coconut masala, and cook till oil separates.
Now pour in some water and salt. Mix well.
Add in eggs and simmer till oil floats on top.
Add in coriander leaves and mix well.

Take all your ingredients
You need some hard boiled eggs
slit them like this
Heat oil in a kadai
Add in fennel seeds, pepper and cumin seeds
fry them for a min
Add in ginger and garlic
and in sliced onions
fry them in oil
once they are nicely golden
Add in grated coconut
fry them for few mins
the coconut will turn little golden
now take them in a blender
add in chilli powder
make it into a fine puree
Heat oil in a kadai
Add in cinnamon and bay leaf
add in chopped tomatoes and green chillies
cook till tomatoes turn mushy
add in the spice powders
mix well
add in the masala
keep cooking
now the oil has separated from the mix
at this stage add in water
mix well
add in salt
now add in the eggs
simmer till oil separates from thecurry
enjoy

    Hi Aarthi ,
    First I thank u for ur wonderful job and ur recipes. Daily at least one time I see ur blog. It's very useful for me.
    Can u know any home remedy for cough and cold. Because my one year old boy baby suffering from offen cold and cough . With in one year he was hospitalised for 2 times for chest congestion. Will u please post any remedy u know like tamil medicine.

    @geethu @Geethu,
    You can make a thin kashayam..
    Take kaanja malli 2 tsp, peppercorns 1 tsp, ginger a small piece, 1 tsp jeera, (if you are in India, you will get these so add any one of them – vethalai/tulasi/omavalli ilai)
    Boil all these using 1 tumbler water and bring it to half. Very effective.. I do the same for my baby.
    If it is nenjusali, I apply Vicks in vethalai and slightly heat in candle and keep othadam on chest. That's also quite effective.
    Looks like very old post.. But I saw only today when searching for egg recipes.
