Eggs, Eggs, Eggs, what a lovely stuff it is..It is like a universal thing. You make anything with it, it taste heavenly. It can become like a main coarse or a sidedish to any meal in no time. I love my eggs, each time i try to make different things with eggs. This is one of the recipe which looks like a normal scrambled eggs, but i added a coconut masala to it and made it so special.
The idea of adding this came to me in just a seconds time, when i saw leftover masala from the beetroot thoran i was making. What a surprise this tasted so yum. So here you go to the recipe.
Preparation Time: 5 mins
Cooking Time: 10 mins
Serves - 2 to 3
Ingredients:
Oil - 1 tsp
Mustard Seeds / Kaduku - 1 tsp
Urad dal / Ulundu Paruppu - 1 tsp
Onion - 1 chopped finely
Green Chilli - 1 chopped finely
Eggs - 4
Salt to taste
Turmeric Powder / Manjal Podi - 1 tsp
For Grinding:
Coconut - ½ cup
Dry Red Chilli - 1 or 2
Shallots - 2
Garlic - 1
Cumin Seeds / Jeerakam - 1 tsp
Method:
Take the grinding ingredients in a blender and make into a coarse mixture without adding any water.
Beat eggs till they are lightly mixed. Set this aside till use.
Heat oil in a kadai. Crackle in mustard and urad dal in it.
Add in onions and green chilli and saute for a min. Add in salt and turmeric, mix well.
Now pour in the egg mixture and start scrambling.
Once it is well scrambled add in coconut masala and mix well.
Cook this for 2 mins and scrambled egg is done.
Serve with rice.

Now beat some eggs well |
Pour that into the onion mixture |
Scramble them |
Keep mixing |
Once it is well scrambled |
Add the coconut masala |
Mix well |
Cook for few more mins |
Serve |

What a great summer recipe! Because it's so boiling hot here, I didn't feel like slaving in the kitchen for hours to make dinner, but this thoran only needs a few minutes to cook. Now I want to check out your vegetarian egg throan too... when the weather gets colder.
