Egg Paratha Recipe – Stuffed Egg Paratha Recipe

Stuffed parathas are so versatile recipe, because you can pretty much stuff anything inside a paratha. It simply taste good.. This is one paratha which i came across and loved it to the core. When i made it and tasted it, i totally loved the combination. It was simply superb. It has a egg mixture stuffed inside it and you dont need any sidedish for this, just a bowl of yogurt or some pickle is enough.

Preparation Time : 10 mins
Cooking Time : 1 to 2 min per batch
Resting Time : 30 mins
Makes : 6 to 8 paratha

Ingredients:

For Dough:
Wheat Flour / Atta – 2 cup + extra
Salt – 1 tsp
Ajwain / Carom Seeds / Omam – 1/2 tsp
Water as needed
Oil for frying paratha

For Filling:
Capsicum – 1/2 cup chopped very finely
Carrot – 1/2 cup chopped very finely
Green Beans – 1/4 cup chopped very finely
Green Chilli – 1 chopped very finely
Eggs – 4
Salt to taste
Pepper to taste

Method:

Take flour, ajwain, salt in a bowl. Add water and knead it to a soft dough..Cover and let it rest for 30 mins.

Now mix all the ingredients for filling.

Take a small portion of dough out. Roll it into circle, drizzle oil and sprinkle with dry flour. Fold in half, drizzle oil and sprinkle with dry flour. Now fold in triangle and roll it out.

Place paratha on hot tawa and cook for few seconds on one side, flip over and cook for few seconds. Now remove the top layer of the paratha gently and spoon some filling in. Flip over carefully and cook till done.

Drizzle oil or ghee over it and cook till golden on both sides.

Serve hot.

Take wheat flour in a bowl
add salt
add ajwain seeds
mix well
add water

take ingredients for filling
crack open egg in a bowl
add salt 
add pepper
add green chillies and red capsicum
add carrots and beans
mix well
divide the dough into equal portions..i made dough for just 2 paratha
take one small portion
roll it out
drizzle little oil
spread evenly
sprinkle some flour
fold over
drizzle oil
sprinkle flour
fold again
roll it out
set aside
place it in a hot pan
cook for few sec
flip over and cook
use your spatula to remove the top layer like this
spoon some of the filling in
cover it
flip over and cook, drizzle oil if needed
cook till golden on both sides
