    About Sweet Corn Fritters

Sweet corn fritters also known as corn nuggets, batter fried sweet corn fritters. It is crispy on the outside and yet soft and fluffy in middle. The batter is made with corn, onions, flour, seasonings, egg, milk and baking powder to make the batter. Check my Potato & Corn Fritters Recipe.

Many people use cream style sweet corn, but some how I don't like that taste. So this is how I do it. I used frozen sweet corn for the fritters. You can use fresh corn as well. Also If you don't eat eggs, you can skip it and use just milk.

I used onions, you can used chopped spring onions. Green chillies, Jalapenos, chopped carrots can be used in the batter. You can even use grated cheese for the recipe.

    • Onions - use finely chopped onions or spring onions for the batter.
    • Plain flour - add flour into the batter to help with binding.
    • Egg - egg helps make crispy fritters which helps with binding and create fluffy texture.
    • Seasonings - I used salt, black pepper powder and red chilli sauce. You can use Italian seasoning and red chilli flakes.
    • Milk - milk helps make the batter smooth and thick.
    • Baking powder - a small amount of baking powder helps make crispy fritters.

3)Add in egg, salt, pepper powder, red chilli sauce, baking powder into the bowl.

4)Mix to a smooth batter. The batter should be thick.

5)Heat oil for deep frying. Now take a spoonful of this batter and drop in hot oil.

Since it's fresh sweetcorn time here in Iowa, I was searching Pinterest for a corn "nugget" recipe when I found your recipe for corn "fritters". Although nuggets usually are coated with a breading with the corn mixture on the inside, I was impressed by your recipe that used FRESH sweetcorn kernels and puree. I thought it sounded delicious and it WAS!! My husband, the pickiest old guy on the planet, loved them! I see this recipe has been around awhile, but I'm so glad I found it! Continued success with your social media endeavors! And Thank You!!
