    Mughlai Chicken Biryani Recipe with step by step pictures. Delicate pieces of chicken cooked with basmati rice taste delicious with onion raita.

     
     
     
     

    Mughlai Chicken Biryani

    This is a flavourful briyani recipe which is a typical dish from the Mughals. This is rich creamy and full of flavour. I served this with Mughlai Chicken.

    How to Make Mughlai Chicken Biryani

    1. Soak the rice for 30 mins. Drain it and set aside. Heat a big pan with lots of water and bring that to boil. Add salt to it and add in the rice. Simmer this till the rice is ¾ cooked. Drain it and leave it to cool so that it gets into individual grains..
    2. Marinate the chicken with curd, coriander powder, salt and garam masala powder for 30 min.
    3. Heat butter and oil in a kadai add cardamom, bay leaf, cinnamon, cumin, mace in this and fry for 30 sec.
    4. Add in ginger garlic and chilli paste and cook for 30 sec.
    5. Add in cashew paste and cook till oil separates. marinated chicken and mix well.
    6. Throw in mint leaves and coriander leaves. Pour a splash of water and bring this to boil.
    7. Simmer this until the chicken is cooked. There should be some gravy left in this..
    8. Now take an oven proof dish or a microwave dish. Spoon half of the chicken gravy in the bottom.
    9. Add rice, fried onions, mint, coriander leaves on top..
    10. Spoon some more gravy on top of the rice. Finish it off with some more rice, fried onion, mint, coriander leaves, raisins and saffron liquid.
    11. Cover this with foil and place it in a 120°C(240°F) oven for 30-45 mins.If you are going to use microwave,Cover this with the microwave lid or plastic wrap and cook it on high for 10 mins.
    12. Take it out of the oven and mix gently. Serve hot with any curry.

    Ingredients

    • Basmati rice-1 cup
    • Chicken-½ kg
    • Curd-1 cup
    • Fried onion-1 cup
    • Cashew-10 grind into paste
    • Mint leaves-1 cup
    • Coriander leaves-1 cup
    • Coriander powder / Malli podi-1 tblspn
    • Garam masala powder-1 tsp
    • Cumin seeds / Jeera-1 tsp
    • Bay leaf / Brinji ilai-1
    • Cinnamon / Pattai-1 small piece
    • Cardamom / Yelakai-4
    • Mace/Anasi moggu-1
    • Ginger garlic and chilli paste-2 tblspn
    • Raisans-1 tblspn
    • Butter-1 tblspn
    • Saffron / Yellow colour- a pinch mixed with some milk
    • Oil-2 tblspn

    Instructions

    Mughlai Chicken Biryani Step by Step

     
    Grab your ingredients
     
     
    Cook rice in salted water till three fourth done

     

    Marinate chicken in Curd, Coriander powder and Chilli powder

     

    Add cinnamon, mace, cardamom in hot oil
     
     
    Add Cumin seeds and Bay leaf

     

    ginger garlic and chilli paste.
     
     
    add in cashew paste
     
     
     
    add in chicken pieces
     
     
    coriander leaves & mint leaves

     

    splash of water
     
     
    cover and cook till oil separates and chicken is cooked

     

    until the chicken is done

     

    Add a spoonful of curry in the bottom. Add in some rice and some fried onions and herbs..

     

    rest of the Curry and Rice. Top it with Fried onion, Raisins and Herbs..Pour some saffron milk.
     
     
     
    Put this in oven and cook on a low temperature for 30 mins.
     
     
     
    all done.

      I made this today! It's fabulous, as usual, but very different from your usual recipes, because it's not spicy at all. My husband loved the addition of those crispy fried onions. I think I added a little too much water to the chicken, because I got a lot of gravy, more than in the pictures, but it all evaporated during baking. So if anyone gets the same, don't worry. Because biryani takes so much work in itself, I didn't have time to prepare any curry, so I just served this with tomato and cucumber raita.
