    I am so into gluten free baking these days. I am loving baking with almond flour and coconut flour. Not only they are super healthy but they makes a perfect guilt free desserts. I am making batch of dessert like this and storing in fridge. So whenever i get hit by sugar craving i can warm up few slices and enjoy.

    Gluten Free Banana Bread Ingredients

    Eggs: Use organic free range eggs if possible.

    Bananas: Very ripe and well-mashed. The more sweet they are, the sweeter the bread is.

    Vanilla extract and Ground cinnamon for flavours.

    Honey: Or use a keto alternative such as stevia or any granulated sweetener.

    Almond flour: An excellent flour substitute that baked exceptionally well. I use finely ground almond flour with skins on. Because they are little cheaper than blanched almond flour.

    Baking soda: Use baking soda for best results. I haven't used baking powder for baking soda in this recipe.

    What is Keto?

    The ketogenic diet (or keto diet, for short) is a low-carb, high-fat diet that offers many health benefits. The idea is for you to get more calories from protein and fat and less from carbohydrates. You cut back most on the carbs that are easy to digest, like sugar, soda, pastries, and white bread.

    How to make paleo almond flour banana bread

    1. Whisk all the ingredients together, one by one in the order listed, in one bowl.

    2. Transfer to a small loaf pan, parchment-lined.

    3. Bake the bread for 40-50 minutes at 180 degree C.

    4. Cool completely before enjoying it. Cool completely before slicing for even firm slices.

    How to make Keto Banana Bread

    1)Use one large banana instead of 2 bananas.
    2)Use keto friendly sugar substitute.

    "The first banana bread recipe appeared in Pillsbury’s Balanced Recipes cookbook but this treat became more widely accepted after another recipe appeared in Chiquita Banana’s Recipe Book in 1950"

    How to store leftovers?

    Once the bread is completely cool, slice it. Then place the slices in an airtight container, separating layers with wax paper. You can keep them this way in the fridge for more than 7 days.

    You can also freeze the slices in freezer bags. Again, if layering, separate the layers with wax paper. If you are freezing, you could warm it in microwave or OTG.

    Pro Tips

    1)If you are doing keto, just use 1 mashed banana.
    2)Also skip honey and use keto friendly sugar like sugar-free sweetener or the equivalent in stevia.
    3)if your bananas are too sweet, you can even skip sugar.
    4)Instead of honey, maple syrup or agave can be used too.
    5)Don't over bake the bread. If you over bake, then the bread may get too dry.
    6)use ripe banana for natural sweetness.
    7)This bread stays good for over a week in fridge.

    Gluten Free Banana Bread

    Serve it toasted in a toaster or pan and serve with some butter. You can drizzle some honey or maple syrup too.

    Ingredients

    • Egg - 2
    • Ripe Bananas - 3 mashed around 1 cup
    • Honey / Maple Syrup / Keto Sugar - 2 tblsp
    • Vanilla Extract - 1 tsp
    • Cinnamon Powder - 1 tsp
    • Almond Flour - 1 ½ cup
    • Baking Soda / Cooking Soda - ¾ tsp

    (MY 1 CUP MEASURES 240 ML)

    Instructions

    • Preheat oven to 180 degree C. Line a loaf pan with parchment paper.
    • Take eggs in a bowl and whisk till combined.
    • Add in banana, sugar, vanilla, cinnamon and mix well.
    • Add in almond flour and mix well.
    • Add in baking soda and mix well.
    • Spoon this into baking pan.
    • Bake for 40 to 45 mins.
    • Remove it cool completely.
    • Slice and serve.

      Something is not right. They tast delicious just don't bake well. I ended up having to scrape mine from the liner and mixing it into my oatmeal.
