We used to have millets atleast once a week instead of rice. It is so healthy and can act as a great substitute for rice. You can cook this as normal rice and serve it with any spicy curries or kuzhambu. Hope you will give this a try and let me know how it turns out for you..

Preparation Time : 5 mins
Cooking Time : 20 to 25 mins
Serves : 3 to 4

Ingredients:

Millet – 1 cup (Samai, Varagu,Thinai or Kuthiraivali)
Water – 3 cups
Salt optional

Method:

Measure your millets..Wash them well..I soak them for 5 mins in water, so any dirt will come on top, then i drain them and wash them well with lots of water.

Take millets in a heavy bottom pan, cover with water. If you want add little salt.

Bring it to a boil. Cover and simmer on the lowest flame for 15 mins.

Now if you see the water must be absorbed by the millets. Fluff the millets gently with fork. Cover with lid and set aside for 10 mins.

Now the millets must be fluffy.

Serve.

For making variety rice and fried rice. Use 1.5 cup to 2 cups of water.

Atleast you will have that little advantage of not having with routine rice which has more glycemic index and less fiber.
