    Millet Kozhukattai Recipe

Barnyard millets / Kuthiraivali are my favorite millets. I love varagu too. Because these millets can be made into anything and they taste just great. I never miss my rice when i eat them, because these both taste like rice. Specially this kozhukattai tasted like my mom's chambara kozhukattai. I have already posted a kuthiraivali tomato upma. This is my another addition to my millet list. You can check my other millet recipes too.

This kozhukattai taste great as it is..But you can serve it with any chutneys...Will share another version of this by adding lots of veggies in them..Give this a try and let me know how it turned out for you.

    About Kuthiraivali Kozhukattai Recipe

Barnyard millet, also known as kuthiraivali in Tamil, Oodalu in Kannada, odalu in Telugu, Jhangora in Hindi, and Kavadapullu in Malayalam, has a fibre content that is six times that of wheat. It's a gluten-free millet with a high calcium, phosporous, and fibre content.

Kozhukkattai, also known as kozhukatta, is a popular South Indian dumpling made from rice flour and filled with grated coconut, jaggery, or chakkavaratti. Kozhukattai, while typically sweet, can occasionally be stuffed with a savoury filling. Kerala Christians prepare it on the Saturday before Palm Sunday, hence the name Kozhukatta Saturday. Modak is a similar dish that is prepared in other parts of India. This is a popular dish for the Ganesh Chaturthi festival.

Ingredients for Barnyard Millet Kozhukattai Recipe

    Barnyard Millet / Kuthiraivalli :

Millet contains a natural, bitter-tasting coating called saponin, which must be removed before cooking. Once cooked, millet can be stored in an airtight container in the fridge for up to 4 days. Millet, unlike other grains, becomes solid and dry when cold and must be broken up and reheated before use.

    Mustard Seeds :

They are used as a seasoning rather than a base flavour in many Indian dishes, and they really perk up a lentil or rice dish when fried in a little oil with curry leaves . As a result, mustard seeds are excellent for adding flavour without adding fat to your diet.

    Green Chilli  :

The green chillies in cooked or raw form give a fiery hot flavor. To reduce the fiery hot flavor the seeds and inner membranes could be removed which is effective at reducing the heat of the pod.

Is barnyard millet better than rice?
