I was little worried that i didn't post any new recipes for pongal this year. I always wanted to make something new this pongal, but somehow i couldn't find time to make. This morning when i woke up, i was stubborn to make something and guess what i made not one but two recipes for this pongal.
I saw this pongal recipe in quite a few blogs, and i wanted to try it so badly. So i gave it a shot and it came out quite good. For me it tasted like sarkarai pongal in white form. But the taste was so good, everyone loved it. And when i was shooting this, my sister brought maha. As you can see she has started grabbing things:)
Preparation Time : 10 mins
Cooking Time : 30 mins
Serves : 3 to 4
Raw Rice / Pacharisi - ½ cup ( You can use any rice)
Milk - 2 cup
Kalkandu / Sugar Candy - ⅓ cup or adjust as you like
Cardamom Powder / Yelakai Podi - 1 tsp
Ghee - 1 tblspn
Cashew - 2 tblspn
Kishmish / Sultanas - 2 tblspn
Take kalkandu in a mixer and powder it finely.Set aside till use.
Take raw rice in a bowl and wash it well. Drain the water and take the rice in pressure cooker. Add milk to it, cook this for 5 whistle, simmer the flame and cook for 10 mins. Now turn off the heat and let the pressure go all by itself. Open the pressure cooker and mix the rice with a spoon.
Put this cooker back on heat and reduce the flame to a low.
Add Powdered kalkadu to the hot rice and mix well. Keep this on low flame and mix well. Cook till the mix is thick.
Now melt some ghee in a kadai and fry some cashews and sultanas.
Now add in the fried nuts and cardamom powder to the rice and mix well.
1)If you cannot find raw rice, you can use any rice you like.
2) Adjust the sweet level as you like.

|Cover with milk|
|Take kalkandu in mixer|
|Now the rice is done|
|Add in powder kalkandu|
|Melt some ghee in kadai|
|Heat it up|
|Add in cashews and sultanas|
|Fry them till golden|
|Now add cardamom powder to rice|
|Add the fried nuts|
