Methi Matar Pulav – Recipe for Leftover Rice / Lunch Box Ideas

This post is for PJ who is going to have her second baby soon…We came to know about this from last month Blogging marathon. We all planned to give her a surprise by doing a online baby shower for her and decided to cook dishes from her own blog and dedicate it to her..I know that it will be a real surprise for her…I am wishing Pj to have a very very safe delivery and a healthy cutie baby soon..

 
I searched her blog and  thought of making this awesome flavourful rice..This is a great recipe for leftover rice and so quick to put together..The one thing which I can advice you please don’t add too much methi leaves, since it makes your rice bitter..
So here you go to the step by step recipe with pictures..
Ingrediants:
Rice -3 cups cooked
Onion-1 sliced thinly
Tomato – 3 chopped finely
Capsicum – ½ chopped
Green Chilli-2 slited
Dry Fenugreek Leaves / Kasuri Methi Leaves – 1 tblspn
Frozen Peas – 1 cup
Fennel Seeds / Sombu / Saunf- 1 tsp
Mustard Seeds / Kaduku – 1 tsp
Chilli Powder – 1 tsp
Coriander Powder / Malli Podi-1 tsp
Garam Masala Powder-1 tsp
Turmeric powder / Manjal Podi-1 tsp
Salt to taste
Oil-2 tblspn
Lemon Juice-to taste
Method:
Soak kasuri methi leaves in water for 2 mins. Drain it and squeeze well. Set this aside for  a moment.
Heat oil and add in mustard and fennel seeds and allow it to crackle.
Add in onions, green chilli and cook till translucent.
Add in chilli powder, coriander powder,garam masala powder,turmeric powder and mix well.
Now add in tomatoes, capsicum and mix well.Cook till it turns mushy.
Add in the drained kasuri methi leaves, peas and toss well.
Add in rice and toss well..Let it get heated through.
Squeeze some lemon juice and mix once..
Serve hot with raita..

Take your leftover rice
prepare all your veggies
soak the kasuri methi leaves in water
squeeze and set aside
heat oil
add mustard
and fennel seeds
add in onions and green chillies
saute for few minutes
add salt in
and your spices
more spices
and mix well
add tomatoes and capsicum
mix well
add in peas
and kasuri methi leaves
and mix well
add a splash of water
and mix well
add rice
and toss well
squeeze some lemon juice
and mix to combine
a close look
serve
taste great with raita

    What a lovely way to hold a virtual shower. That dish was fun to see made in pictures. It went through many transformations of color and texture. I am sure it was delicious.

    What a great idea I am sure PJ will appreciate this.

    I never know what to do with left over rice, this sounds delicious but I only have ground Fenugreek, maybe it will still give it a bit of the flavour. Diane
