    • You can use any millet flour, dry roast the millet in a pan. Cool it completely. Powder it fine. Sieve it and use.
    • Make sure you whip the eggs really well with the sugar till stiff peaks are formed. This step makes the cake light and fluffy.

    • Every oven is different. So keep checking the cake.
    • If you use a bigger cake pan, the cake will cook even faster.

Store the cake in an air tight container for up to 2 days at room temperature.
You can store the cake in fridge for longer.

    Serving Suggestions

You can serve the cake with a cup of tea or coffee.

I made this recipe as is. I love the springy sponge-cake texture. The flavor is good too. However mine came out dry, any reason for this?

Also I am fully grain free so I would love more millet recipes!

      Hi Aarthi,
Thanks for your recipe. It looks like a sponge cake recipe. Can we dried mixed fruits to this recipe.
Could you also post a butter cake recipe replacing the plain flour with millet flour.
