    I love baking with bananas. So far I have shared tons of recipes using bananas. You can imagine the cake and I have it right here for you. This is my latest addition to my recipe collection. It is a delicious banana upside down cake and it is everything you want in a banana cake.

    • Upside down cakes are a classic cake which is super moist and delicious.
    • This recipe is a great way to use up your over-ripe bananas on hand, in the cake itself and in the topping of the cake as well.
    • Completely homemade, this has the best texture and moistness.
    • This recipe is similar to my pineapple upside down cake and it is one of the best recipe.

    This cake is super easy and the end results are to die for. If you love caramel drizzle over any of your desserts, then this Banana Upside Down Banana Cake already comes packed full of that goodness.

    If you want to have more of caramel, then double up the caramel sauce ingredients so you would have more caramel sauce to drizzle over the cake.

    The cake is plain vanilla cake which I made very simple. I didn't add bananas in the cake batter since I don't want to over power the cake. The bananas on top is plenty and adds so much flavour to the cake.

    So here you go for the recipe,

    HOW TO MAKE UPSIDE DOWN BANANA CAKE

    • Caramel sauce: start by making caramel sauce. take butter, sugar, vanilla, salt in a sauce pan and melt gently to create a sauce. pour this sauce into your cake pan. don't over cook the caramel sauce else it may harden.
    • Bananas: now take the star of the show, ripe bananas. slice them into rounds and place over the caramel sauce.
    • Dry ingredients: mix together the dry ingredients separately in a bowl and set aside.
    • Wet ingredients: mix together the wet ingredients separately in another bowl.
    • Cake batter: mix both dry and wet together gently to create a smooth batter. pour the batter over the bananas and bake till cooked.
    • Serving: cool the cake for 2 mins in the pan and un mould immediately. Serve warm with vanilla ice cream.

    TIPS AND TRICKS FOR MAKING BANANA UPSIDE DOWN CAKE:

    • Use a 9″ round spring-form pan, although this has worked for me in the standard 9″ cake pan others have had trouble with the batter spilling over, so to be safe, use a higher sided pan.
    • Use ripe bananas for best taste.
    • You could skip adding salt when making the caramel sauce. But salt adds nice taste to the sauce like salted caramel sauce.
    • Never leave the cake to cool completely. Just let the cake cool for 2 minutes after you remove from the oven and unmould immediately. Else the caramel may harden and the cake won't come out of the pan.

    Banana Upside Down Cake Recipe

    Simple yet delicious banana upside down cake which has caramel coated bananas on top and spongy vanilla cake beneath it.

    Ingredients
      

    For Sauce

    • ½ cup Brown Sugar
    • 3 tbsp Unsalted Butter
    • 2 Ripe Banana
    • 1 tsp Vanilla Extract
    • a pinch Salt

    For Cake:

    • ¾ cup Maida | All Purpose Flour
    • ¼ cup Milk
    • ½ cup Sugar
    • ½ tsp Cinnamon powder
    • ¼ tsp Baking Soda | Cooking Soda
    • ½ tsp Baking Powder
    • 1 Large Egg
    • ¼ cup Oil - ¼ cup
    • 1 tsp Vanilla Extract

    Instructions
     

    • Preheat oven to 180 degree C. Take any shaped baking tray and grease it lightly with butter if you want. But it is not necessary. I used heart shaped baking pan.
    • Take sauce ingredients in a sauce pan and melt gently.
    • Pour this into a baking pan, spread evenly. Arrange sliced bananas on top and set aside.
    • Take flour, baking powder, baking soda, cinnamon in a bowl. Mix well and set aside.
    • In a separate bowl, mix egg, milk, oil and vanilla.
    • Now pour this wet ingredients into the dry and fold gently.
    • Spoon this over the banana layer and bake for 25 to 30 mins.
    • Remove the pan from oven and leave to cool for couple of mins and immediately unmould.
    • Serve.

    STORAGE 

    • You can keep the cake in a air tight container at room temp for one day.
    • Store in fridge for longer shelf life.

    This banana upside down cake taste amazing when served hot or warm with a scoop of vanilla ice cream.
