Mushroom Omelette Recipe

Omelette are such a versatile dish to make, you can serve them with rice, roti or bread, they go extremely well with these. I have showed few versions of omelette in my blog so far and this is a breakfast kind of omelette made with mushrooms. These taste yum with bread. Hope you will give these a try and let me know how it turns out for you..

Preparation Time : 5 mins
Cooking Time : 20 mins
Serves: 2

Ingredients:

Eggs – 3 to 4
Oil – 1 tblspn + more for making omelette
Garlic – 3 chopped finely
Onion – 1 chopped finely
Spring Onion – 2 chopped finely
Capsicum / Bell Pepper – 1/4 chopped finely
Mushrooms – 2 cups sliced thinly
Soy Sauce – 1 tsp
Oregano – 1/2 tsp
Salt to taste
Pepper to taste

Method:

Crack open eggs in a bowl and add a tsp of soy sauce. Mix well.

Now heat oil in a pan, add in garlic, spring onions, onions, capsicum and saute for few mins.

Now add in mushrooms and saute them on high heat till it is well browned. It will take around 5 to 7 mins.

Add in oregano, salt and pepper and mix well.

Now add this into the eggs and mix well.

Heat oil in a pan, pour small omelettes and cook them till it is done and set on the bottom. Now flip over and cook till golden on other side.

Now remove it and serve with toast.

Take all your ingredients
Crack open few eggs in a bowl
add a dash of soy sauce
beat till mixed well

add in mushrooms
toss well
cook till brown
now it has reached nice and brown
season with salt and pepper
add in oregano
toss well
add this mix into the eggs
mix well
you could make small omelets but i made one big one, but i found it difficult to flip them
i just brought the sides in
so it will cook a bit evenly
now the top portion looks a big set
so flip it over and cook for few mins
Now serve with toast

    can i use something else instead of OREGANO ?

    actually what does it do to the dish?

    @Parvathy Ajiu can skip oregano. oregano adds nice flavour
