    Broccoli Soup Recipe

    When you want to include a good amount of broccoli in your diet, then this healthy version of Broccoli Soup Recipe is the Answer. It is made with a handful of ingredients like broccoli, garlic, onions, milk, cornstarch and can be made from start to finish in less than 20 minutes.

    Broccoli soup was one of my most requested recipe for quite sometimes. I wanted to make the classic broccoli cheddar soup, but decided to stick to the healthy version so everyone can try.

    This broccoli soup recipe is super healthy with no cream or butter. It is smooth and creamy soup, if you prefer something slightly chunkier, then check my cream of broccoli soup.

    About Broccoli Soup

    If you are someone like me, looking for ways to include broccoli in your diet or kids diet, then this soup is your Answer. You can easily sneak in a large amount of broccoli in this soup without knowing.

    This healthy version of broccoli soup is made with just a handful of ingredients like oil, garlic, onions, broccoli, salt, pepper, milk and cornstarch. It comes together in less than 20 minutes.

    The flavour of this soup is very mild with just onions and garlic which hides the smell of broccoli and gives a pleasant aroma. If you wish to sneak more veggies into the soup, you can add some carrots too. Enjoy the soup with fresh crusty bread or croutons.

    If you are looking for soups for toddlers, then this is the recipe. One suggestion, if you are making this for kids, add butter instead of oil and cream instead of milk.

    Ingredients

    • Broccoli - choose bright fresh broccoli which packs tons of nutrients. Though broccoli loses some colour when cooking and reheating, still it stays green once done.
    • Olive Oil - I used olive oil to make the soup lighter. You can use butter also.
    • Onion and Garlic - these 2 are the base aromatics for the soup. When sauted it adds a wonderful flavour to the soup.
    • Water - to make it simple and easy, I used water. But you can use vegetable stock to make it even more flavourful
    • Milk - This makes the soup creamy without being heavy.
    • Cornstarch - cornstarch when mixed with milk adds a creamy texture to the soup.
    • Seasonings - salt and pepper are only seasoning.

    Step by Step Pictures

    1)Take cornstarch in a bowl and add milk to it and mix well till it is lump free. Set aside, we will use this in the end.

    2)Heat oil or butter in a pan, add in onions and garlic.

    3)Saute onions and garlic until it is slightly golden in colour.

    4)Now add in broccoli florets.

    5)Saute the florets for 2 to 3 minutes to coat them with the onions and garlic. It removes the raw smell from the broccoli.

    6)Now add enough water to cook the broccoli florets. I used around 1 cup of water. We can add more water later. Cook until broccoli is cooked. it will take around 4 to 5 minutes. By which time, the water must have dried completely.

    6)Turn off the heat and allow the broccoli to cool down for few minutes. Now take it in a blender.

    7)You can add some water at this moment to blend the broccoli. Make the puree smooth or slightly coarse as you like.

    8)Pour the broccoli puree into the pan. Pour in 2 cups water(or adjust) and mix well. Bring it to a full boil. Cook for couple of minutes. Once it starts to boil, add in the milk and cornstarch mixture which we have mixed earlier. Mix well and cook until the soup thickens and the raw smell from broccoli leaves.

    9)Add salt and black pepper powder to taste.

    10)Broccoli soup ready to serve.

    11)Enjoy hot with croutons.

    Expert Tips

    • Choose fresh broccoli for making the soup, wash them really well. I like to soak them in cold water for 10 minutes before cooking.
    • You can use butter instead of oil for more flavour.
    • Chopped carrots and potatoes can be added along with broccoli to make the soup more substantial.
    • Be creative with the herbs, you can add oregano, Italian seasoning too.

    Storage and Serving

    Broccoli soup can be stored in fridge for upto a week. Reheat at the time of serving. Enjoy the soup with fresh crusty bread or croutons.

    FAQ

    Q: How to make this broccoli soup vegan?

    Just skip the milk or use any dairy free milk instead of regular milk. Coconut milk can be used.

    Q: Can I make cauliflower soup the same way?

    Yes you can use cauliflower instead of broccoli for a rich creamy cauli soup.

    Ingredients

    • 4 cups Broccoli cut into florets
    • 2 teaspoon Olive Oil
    • 1 small Onion peeled and chopped finely
    • 2 cloves Garlic peeled and chopped finely
    • 3 cups Water
    • 1 teaspoon Salt to taste
    • ½ teaspoon Black Pepper Powder to taste

    For Mixing Together (slurry)

    • ½ cup Milk
    • 1 teaspoon Cornstarch

    Instructions
     

    • Cut broccoli into small florets and wash them well. Take cornstarch in a bowl and add milk to it and mix well. Set aside.
    • Heat oil in a pan, add in onions and garlic and saute for couple of minutes until it gets slightly golden brown. Now add in broccoli in it and stir fry them for 2 to 3 mins till raw smell leaves.
    • Pour in 1 cup of water and mix well. Cook the broccoli covered for 5 minutes until it is cooked through. The water must have completely dried by now. Take it off the heat and let it cool for few minutes.
    • Now add the cooked broccoli into the blender and make it into a puree. Transfer this broccoli puree into the same pot. Add 2 cups more water and mix well. Bring it to a full boil and boil for 3 to 4 minutes.
    • Now Add in milk cornstarch mixture and mix well. It will thicken instantly. Cook this for 2 more minutes. Now season with salt and pepper to taste and serve hot.

      Can we make without milk???can we use cauliflower instead of broccoli...thank you..

      @Ankita Suman u can use cauliflower. if you want to remove milk, just add few pieces of potatoes when cooking. potatoes add nice creamy texture. U can add some cream too
