    I always have a special place in my heart for banana bread. I have made many versions of banana bread in this blog. This is one more made using rye flour. I used a combination of rye flour and whole wheat flour. To my surprise it turned out so moist and fluffy.

    1)It is a basic and easy recipe.

    2)It needs just a handful of ingredients.

    3)It calls for butter instead of oil.

    4)It has a good amount of ripe bananas in it.

    5)The cake is so moist and soft.

    How to Make Rye Banana Bread at Home

    • Preheat oven to 325 Degree F | 160 Degree C. Lightly grease a 9" x 5" loaf pan. I used glass. If you are using metal, line with parchment paper for easy release.
    • Take butter, brown sugar, vanilla, cinnamon in a bowl and mix till creamy and fluffy.
    • Eggs are added and combine again till fluffy.
    • In goes mashed bananas and mix well.
    • Add in baking soda, baking powder and mix well.
    • Both flour are added and fold gently.
    • Now add in chocolate chips and fold again.
    • Spoon this into loaf pan and bake in a preheated oven for 1 hour to 1 hour 10 mins.
    • Remove and cool completely.
    • Now un mould. Slice and serve.

    1)WHY IS MY BANANA BREAD SO DENSE?

    The more you mix your banana bread batter, the more gluten is developing in the bread – which is great for a yeast-risen, chewy loaf, but not so great when you’re hoping for a tender, soft quick bread. An over mixed banana bread batter will result in a dense, rubbery loaf.

    2)HOW DO YOU KEEP BANANA BREAD MOIST?

    1. Cool the bread completely.
    2. Place a paper towel in the bottom of an airtight storage container OR in an airtight bag. Then place the cooled loaf on top of it.
    3. Cover the bread with another paper towel.
    4. Seal.

    3)SHOULD YOU REFRIGERATE BANANA BREAD?

    Banana bread should always be kept in plastic wrap, tin foil, or an airtight container to keep it from drying out or going bad quickly. You can extend the life of your banana bread up to about a week by refrigerating it. If you‘d like to freeze your banana bread, use freezer wrap or a heavy freezer bag.

    4)HOW LONG DOES BANANA BREAD STAYS FRESH?

    1. Banana bread stays good for 2 to 3 days when stored in a air tight container at room temperature.
    2. If you store in fridge, you can keep it for a week in a air tight container in fridge. You can warm in microwave for 10 seconds when serving.
    3. If you are freezing banana bread. Cool it down, wrap in plastic wrap and then foil and freeze for more than a month. Thaw it in fridge the day before serving. You can warm in microwave or in toaster.

    1. Use ripe bananas for natural sweetness and best tasting banana bread.
    2. Don't over mix once dry ingredients are added. Just fold it gently.
    3. You can add any chopped nuts like walnuts, almonds as you prefer.
    4. Chocolate chips is optional. You can skip it.

    SERVING SUGGESTIONS

    Serve banana bread warm with a cup of tea or coffee.

    STORAGE SUGGESTIONS

    You can store banana bread in fridge upto a week. Warm when needed.

    • 3 large Ripe Bananas
    • 1 cup Rye Flour (120 grams)
    • 1 cup Whole Wheat Flour (120 grams)
    • ½ cup Unsalted Butter (110 grams)

    • 1 tsp Vanilla Extract
    • 2 Eggs
    • 1 tsp Cinnamon powder
    • 1½ tsp Baking Powder
