    Sweet Corn Muffins Recipe - Savory Corn Muffins Recipe with step wise pictures.

    Delicious and healthy sweetcorn muffins which taste super delicious. This makes a great breakfast or after school snacks for kids. They will love it for sure.

    If you have some sweet corn cream style can lying around then use that to make this muffins for your kids and they will love it for sure. This muffin turned out super soft and almost like my egg muffins. The sweetcorn added a subtle sweetness to this and the peppers gave a little texture. You can even add any veggies you like. Spinach would be great in this too.

    Ingredients
      

    • Cream Style Sweet Corn - ¾ cup
    • Egg - 1
    • Milk - ¼ cup
    • Melted Butter - 2 tblsp
    • Capsicum - ¼ cup chopped
    • Wheat Flour - ¼ cup
    • Baking Powder - ¼ tsp
    • Salt to taste
    • Pepper to taste

    MY 1 CUP MEASURES 240 ml

    Instructions
     

    • Preheat oven to 180 degree C. Grease nonstick muffin mould with oil and set aside. Or you can line with silicon or cupcake cases.
    • Mix all ingredients together.
    • Pour this into the mould and bake for 20 to 25 mins.
    • Remove and cool completely.
    • Remove and serve.

    Notes

    1)If you dont have cream style sweet corn. Take 1 cup cooked sweet corn and puree till smooth. Then use that.

    Pictorial:

    1)Take cream style sweet corn in a bowl. If you dont have that. Take cooked sweet corn in a blender and puree till smooth. You can even add few whole cooked sweetcorn in this.

    2)Add an egg

    3)Season with salt

    4)Add some pepper

    5)Mix well

    6)Add melted butter

    7)Add in red chillies

    8)Add in milk

    9)Mix well

    10)Add in wheat flour.

    11)Add in baking powder

    12)Mix well

    13)Grease a nonstick muffin mould with little oil.

    14)Spoon some batter in

    15)Bake till done.

    16)Once it is cooled, remove from mould and serve.
