The curry gets its very dark brown colour from the roasted coconut added into it which thickens the curry. This is a spicy and comforting curry taste best with rice or roti.

Spicy Mutton Curry
This is my go to mutton curry, it is simple to make doesn't need a whole lots of spices. Just basic but taste really yummy. I love these kind of dark colour curries with a thin layer of oil floating on the top.
About Mutton Curry
Mutton is also known as lamb, we cook mutton every week specially on the weekend. It is either our basic mutton kuzhambu or this curry which has a iconic dark brown colour.
Whenever we visit Kerala, we used to order mutton roast. It usually comes in a dark brown colour curry which looks so appetizing. I used to think how they get the colour in all their roast.
The secret lies in two steps. One is sauteing the onions till golden brown and roasting the spices till dark and toasty. Some recipes even include coconut which is roasted till dark colour which gives the colour.
This recipe, i tried roasting the onions and coconut till dark and the colour of the curry turned into a beautiful brown colour. Very appetizing and tasted amazing.

The ingredients used in this mutton curry is very simple. Just basic spice powders, onions, tomatoes. This recipe doesn't uses whole spices too, only garam masala powder is added for the masala flavour. It has coconut which is roasted to provide nutty taste to the curry.
I used a pressure cooker to cook the curry, but you can cook in a regular pot. But mutton takes long time to cook. So you need to cook for hours if not using pressure cooker.
If you have an instant pot, you can use that to cook. Just use the pressure cook option in instant pot and pressure cook for 25 to 30 minutes.
Mutton Curry is perfect to enjoy with some hot rice or some chapati. It can be had with Appam, Idiyappam and Kerala Parotta. This curry is usually served with rice, nool parotta, Tandoori roti, idli, dosa, idiyappam or ghee rice.

Ingredients
- Onions - use large red onions which adds incredible flavor to the dish. Shallots can be used as well.
- Tomatoes - use ripe tomatoes which adds a sour and slight sweet note to the curry.
- Ginger & Garlic - main ingredient to flavour the mutton curry which also hides the gamey smell from the meat.
- Spice Powders - basic spices like kashmiri chilli powder, coriander and garam masala powder is used.
- Coconut - fresh coconut is roasted till dark and golden before grinding to a paste. You can use frozen coconut, even dessicated coconut can be used.
- Mutton - depending on the mutton quality, it might take more or less time to cook.

Step by Step Pictures
Make Curry Base
1)Heat coconut oil in a pressure cooker. Add in sliced onions and saute till golden brown.

2)This is the colour you are looking for. It should be golden, dark and brown.

3)Add in ginger garlic paste and saute for couple of minutes until the raw smell leaves.

4)Add in tomatoes, green chillies and cook that down until the tomatoes get mushy.

5)It will take around 4 to 5minutes.

6)Add in all the spice powders. I added some kashmiri chilli powder, you can use regular chilli powder too, in that case use less quantity. Since Kashmiri chilli powder is milder.

7)Add in coriander powder.

8)Add garam masala powder.

9)Roast the spice powders in the oil until it gets golden and toasty.

10)This step will take around 4 to 5minutes. This roasting process will help with the colour of the curry.

Cooking Mutton
11)Add in mutton pieces.

12)Season the mutton with salt.

13)Stir fry the mutton in the masala for 4 to 5 minutes until the masala coats the mutton pieces really well. Let the mutton gets seared in the masala.

14)Pour in some water just enough to cover the mutton pieces.

15)Cover and pressure cook for 6 whistle, simmer the pan for 10 mins. Turn off the heat and let the pressure release all by itself.

16)Depending on the size of mutton and the quality of mutton, it might take longer time to cook. Now the mutton is cooked and tender.

Roasting Coconut
17)While the mutton is cooking, lets roast the coconut. Take coconut in a dry pan.

18)Start roasting them on low medium heat until it gets dark and golden in colour.

19)This is the colour you are looking for. It provides the dark colour to the curry.

20)Take roasted coconut in a blender, add some water and grind them to a smooth puree.

21)Now the paste is ready. This is used to thicken the curry.

Make Mutton Curry
22)Pour the coconut paste to the mutton curry and mix well.

23)Cook this for few more minutes, like 8 to 10 minutes on very low heat. A layer of oil will float on top when cooked longer.

24)Add in coriander leaves.

25)Serve with rice, roti or any main dishes.

Expert Tips
- You can use fresh coconut, frozen or even desiccated coconut in this curry.
- Add few cashews along with coconut when grinding for more creamy texture.
- Depending on the quality and size of mutton the cooking time may vary.
- Fry curry leaves in coconut oil and use that to garnish the curry.
Instant Pot Cooking
If you have an instant pot, you can use that to cook. Just use the pressure cook option in instant pot and pressure cook for 25 to 30 minutes. Let the steam release by itself and proceed as usual.
Serving & Storage
This mutton curry stores incredibly well in fridge. You can store them in an air tight container in fridge upto a week. Reheat until hot and bubbly before serving.

Ingredients
- 500 grams Mutton | Lamb
- 4 tablespoon Coconut Oil
- 2 large Onions peeled & sliced thinly
- 2 large Tomatoes sliced thinly
- 2 tablespoon Ginger Garlic Paste
- 3 no Green Chillies slit
- 2 tablespoon Kashmiri Chilli Powder
- 2 tablespoon Coriander Powder
- 2 teaspoon Garam Masala Powder
- 1 cup Water as needed
- ¼ cup Coriander Leaves finely chopped
- Salt to taste
For Roasting & Grinding
- 1 cup Fresh Coconut grated
- Water to grind
Instructions
- Heat oil in a pressure cooker. Add in sliced onions, saute and cook till golden. Once the onion is nice and browned, add in ginger garlic paste and saute for a minute till raw smell leaves.
- Add in tomatoes and green chillies. Cook this till tomatoes cook down and turn mushy.
- Add in all the spice powders and salt. Mix well with the masala. The masala should be thick and all most like a paste. Now add in mutton and toss well with the masala.
- Keep tossing till the masala coats the mutton pieces and the mutton gets little dark brown in colour.
- Now add in 1 cup of water or until the mutton is fully immersed. Cover and pressure cook for 6 whistle, simmer the pan for 10 mins. Turn off the heat and let the pressure release all by itself.
- When the mutton is cooking, dry roast the coconut in a dry pan till it is golden brown. Remove it to a blender and make it into a fine puree by adding some water.
- Once the mutton is cooked, add the coconut paste in it and simmer for another 10 to 15 mins till oil separates on top.
- Add in coriander leaves and turn off the heat. Serve with rice or anything you like.

@Anonymouswithout pressure it will take around 1 to 1.30 mins to cook in a normal. Start with 1.5 cup of water and keep adding more water if the mutton gets dry
